PEANUT CHICKEN CURRY / PALM OIL CHICKEN / WEST AFRICAN CHICKEN CURRY



This recipe is adapted from the palm oil chicken curry.I used to cook this when I was living in Nigeria. Palm oil is extracted from the kernel of oil palm and is reddish in colour. In Brazil it is known as Oleo de Dende..It is commonly used for cooking in West Africa, Southeast Asia and Bahia (Brazil). If you can't find this oil you may use normal cooking oil. I have used palak (spinach) in the place of African greens. (You may use any other green leafy vegetable too).
This curry is usually served with pounded yam in West Africa. We dip it in the gravy and relish it. The tastestill lingers in my mouth.  In India we can only find this yam in Kerala. The curry can also be served with plain rice.

Ingredients:
Chicken .... 400 gms
Onions ......1 (finely chopped)
Tomato puree ..... 1/2  cup
Red chilli paste ..........  2 tbsps
Spinach ...................... 1 cup
Roasted groundnuts/ peanuts  .... 1/2 cup ( blend into a paste adding water)
African spice mix or garam masala  ...........  1 tbsp.
Salt ........................... to taste
Palm oil or any oil ..... 4-5 tbsps

Method:
Method:
1. Heat a little oil and stir fry the onion until pink in colour.
2.Add the chicken pieces and garam masala and stir fry for 5 minutes. Simmer for few minutes.
3. Now add the tomato puree and chilli paste. Saute and dd sufficient water to cook the chicken and let it simmer.
4. When half done stir in the peanut paste and chopped spinach leaves. Add salt and let it simmer till done.
Serve with pounded yam or  plain boiled rice.

  9. I'm really amazed at how so many African dishes are so similar to the Indian Curries. Living in Nigeria, you must have tasted most of the local dishes.

  10. This is very similar to a Ghanian chicken dish I make often called Chicken Palaver. It is always a big hit and I am sure this one is just as delicious
