SOOKHE FALSE KE BISCUIT (COOKIES) / MARTHA STEWART'S LEMON CURRANT COOKIES

 

Try out these delicious lemon currant cookies from Martha Stewart's collection. Her recipes always come out perfect if you follow the exact measurements. These cookies have a softer texture inside but are nice and firm on the outside. They taste Divine with sweet and tangy flavours blended together. 
If you want to make an eggless version skip the egg and add little more baking powder and 2 tbsps of milk. 



Ingredients:
All purpose flour / maida ......  3/4 cup
Unsalted butter ...................... 1/4 cup
Icing sugar  .........................  1/2 cup
Sour cream ......................... 1/8 cup
Egg ...................................... 1
Baking powder ................... 1/8 tsp
Salt ..................................... 1/8 tsp
Dried currants ..................... 1/4 cup
Lemon zest ........................ 1 tsp
( all ingredients at room temperature)

Method:
1. Sift the flour, salt and baking powder.
2. In a large bowl beat the butter and sugar until fluffy.
3. Add the sour cream and egg. Beat them until well blended.
4. Now spoon in the sifted flour little by little and continue beating until all the flour is used up.
5. Mix the lemon zest and black currants.
6. Put a large nozzle into a piping bag and transfer the cookie mixture into it. 
7. Pre-heat the oven.
8. Line a baking tray with parchment paper and grease it well with butter.
9. Pipe out the cookies leaving 1 and 1/2 inch space between them as they will flatten on baking.
10. Bake @ 180 C for 12 to 15 minutes. Keep a check after 10 minutes. The time may vary a bit depending on the type of the oven and the size of the cookies.
11. When you see the edge becoming brownish they are done. Let them cool well before removing from the tray.
12. These cookies have a softer texture inside but are nice and firm on top.

Yield : 3 dozen cookies of medium size or 2 dozen larger size.

HEART SHAPED COOKIES WITH UNSALTED CASHEWNUTS / VALENTINE DAY SPECIAL RECIPE


 Here is a very easy recipe of cashew nut  cookies. I made them heart shaped for the upcoming Valentine Day. We just need few ingredients that are always available in our kitchens. 

This recipe is part of the "A-Z Recipe Challenge" in a facebook group wherein we bloggers come together and choose key ingredients alphabetically to make and post a dish every month. The alphabet of this month is U and since we don't have any ingredient starting with this one. we decided to make something with Unsalted ingredients. I decided to make cashew nut cookies using Unsalted Cashew Nuts

Ingredients:
Unsalted Cashew Nuts ..... 1 cup
Powdered sugar ................ 1/2 cup
All purpose flour ............. 1/2 cup
Melted butter or ghee ...... 1/4 cup
Unsalted pistachios ......... handful
Baking powder ............... 1/2 tsp
Cardamom powder ........ 1/2 tsp
Milk .............................. 2 or 3 tbsps

Method:
1. Soak the pistachios that we are going to use for garnishing . This helps to peel and slice them easily and also to retain the green colour while baking.
2. Grind the cashew nuts to a fine powder.
3. In a large mixing bowl beat the melted butter or ghee and sugar until fluffy.
4. Add the cashew nutpowder, baking powder and the cardamom powder.
5. Mix well with a spatula.
6. Now add the all purpose flour (maida) and mix until the ingredients are combined well enough.
7. Add a spoonful of milk and continue to mix so that the dough is moist enough.
8. You may require 2 or 3 tbsps of milk to get the perfect consistency.
9. Now with the hand gather the dough and knead lightly. Set it aside to rest for 15 - 20 mins.
10. Peel and slice the pistachios while the dough is resting.
11. Roll out a portion of the dough and cut out the cookies with the help of a cookie cutter.
12. Make all the cookies and place them in a  baking tray on a parchment paper or silicon mat.
13. Garnish them with pistachio slices.
14. Bake in a preheated oven at 180 C for 8 to 10 minutes. The time and temperature may vary a bit depanding on the size of the oven.
15. Cool them well before storing.


Note:
You may also use whole wheat flour if you want to make them healthier.
The same can be made with any other nuts instead of cashews.
If you areusing a small table top oven bake at 150 C

COCONUT COOKIES WITH OATS


Craving for coconut cookies ?  How about trying out these healthy ones with the goodness of oats, whole wheat flour and olive oil. These cookies are soft, chewy and irresistible. You can't stop with one. 
I have used organic jaggery powder to sweeten them. You can make the same recipe using all purpose flour and icing sugar if you want white coloured cookies. If you wish you can replace the olive oil with melted butter. Skip adding salt if the butter is salted.


The best part is that the cookie dough can be made into rolls, wrapped in a cling film and frozen. Whenever you crave for some just remove a roll , thaw it a bit, cut it into slices and bake. 

Ingredients:
Whole wheat flour ..... 1 cup
Oats ........................... 1/2 cup
Dessicated coconut ... 1/2 cup
Organic jaggery powder .. 1 cup
Olive oil ........................ 1/2 cup
Eggs ................................. 1
Vanilla essence .............. 1 tsp
Baking powder ............... 1/2 tsp
Baking soda ..................... 1/2 tsp
Salt ................................... 2 pinches
Cinnamon powder ............ 1/2 tsp (optional)


Method:
1. Mix together the flour, salt, cinnamon powder,baking powder and baking soda and sift them.
2. In a large bowl beat the oil, jaggery powder, eggs and vanilla essence until creamy.
3. Add the mixed flour little by little and continue beating until it is used up.
4. With a spatula stir in the dessicated coconut and the oats.
5. The dough may appear sticky but that is the way it should be.
6. Divide it into two and make thick rolls. You can grease your hands while doing this.
7. Place them in a cling film and make a tight roll like a toffee .
8. Freeze the rolls until the dough gets firm.
9. Remove them and cut them into slices as thin as you desire.
10. Place them in a baking tray on a silicon mat or parchment paper.
11. Bake in a pre-heated oven at 200 C for 15 to 20 minutes. The baking time may vary depending on the thickness of the cookies and the size of the oven. Keep a check after 12 minutes.
12. When you remove them they may appear soft but allow them to cool properly. 
13. These cookies have a soft and chewy texture. Enjoy them with your tea.

RAISIN AND OAT COOKIES


 Here is an easiest cookie recipe that you might have made so far and a healthy one too. All you have to do is mix all the ingredients together, shape the cookies and bake them. Sounds interesting isn't it ? 
These cookies have a soft and chewy texture inside and a little crispy on the edges. Each bite is loaded with the sweet burst of the raisins and you will surely like them. 

Using Oats in your daily diet:
Oats and oatmeal are packed with fiber, protein, and tons of vitamins and minerals. They are such a versatile food and can be incorporated into practically any meal of the day.

Health Benefits of Raisins:
They have a plethora of health benefits, which include improved digestion bone health, iron levels, blood flow, fertility, and sleep. They have also been known for boosting energy, as well as for their positive impact on eyes, teeth, and hair

Why it is good to use Olive Oil:
It is rich in antioxidants. The main fat it contains is monounsaturated fatty acids (MUFAs), which experts consider a healthful fat.

Ingredients:
Oats ..... 2 cups
Raisins ... 1/2 cup
All purpose flour .... 1/2 cup
Organic jaggery powder ... 1/2 cup
Olive oil .................... 1/2 cup
Eggs ....................... 1
Vanilla essence ....... 1 tsp
Baking soda ........... 1/4 tsp
Salt ........................ 1/4 tsp
Cinnamon powder ... 1/2 tsp

Method:
1. Break the egg in a large mixing bowl and whisk it.
2. Add all the ingredients.
3. Mix with a spatula.
4. Take a small portion on you palm and shape the cookies.
5. Spread them on a parchment paper in a baking tray leaving space between them.
6. Bake them in a pre-heated oven at 200 C for 10 - 12 minutes.
7. These cookies appear to be softer but will harden after cooling. 
8. Let them cool well before removing them.

Note: 
In the place of olive oil you can also use butter or any vegetable oil that has no smell.
Organic jaggery can be replaced by normal sugar or brown sugar.

HEALTHY WHOLE WHEAT CRACKERS WITH SESAME & CHIA SEEDS


Make and enjoy these healthy and savoury crackers with the goodness of sesame seeds, chia seeds and olive oil.  Cheese also adds to the flavours. you can use any cheese available. This is a very easy and quick recipe. You can serve these crackers with any dip you like or at tea time. I have used pizza seasoning in this recipe. However you can use any dried herbs you prefer.



Ingredients:
Whole wheat flour ............ 1 cup
Sesame seeds ................... 3 tbsps
Chia seeds ........................ 3 tbsps
Grated cheese .................. 3 tbsps
Olive oil ......................... 2 tbsps
Salt ............................... 1/2 tsp
Baking powder ............. 1/2 tsp
Pizza seasoning ............ 1 tsp  or (you can use any herb)
Water ......................... about 1/4 cup


Method:
1. Transfer the flour in a mixing bowl.
2. Add the sesame seeds and chia seeds saving some for sprinkling on top.
3. Next add the salt, baking powder and grated cheese. Mix them.
4. Now add the oil and give a good stir until everything is mixed well.
5. Take 1/4 cup water. Add little by little and knead the dough. If required you can add little more water. The dough should be nice and pliable.
6. Grease a sheet of parchment paper and roll out the dough on it in a rectangular shape to the thickness you desire.
7. Using a cutter mark the divisions in a rectangular or square shape.
8. Place the parchment paper with the crackers in a baking tray.
9. Bake in a pre-heated oven at 180 C for about 22 to 25 minutes. The time may vary a bit depending on the thickness of the crackers.
10. When done remove the tray and let them cool before you break and separate the crackers.
11. These can be enjoyed as a tea time snack or even served with any dip.

HEALTHY RAGI COOKIES (Eggless Recipe)


Here is an easy recipe of healthy cookies made with Ragi I have combined it with gram flour which can also be substituted with All purpose flour or whole wheat flour.

Ingredients:
Ragi flour ................ 1/2 cup
Gram flour / besan .... 1/2 cup or Whole wheat flour
Jaggery powder ........ 7 - 8 tbsps (I used organic jaggery powder)
Desi ghee / clarified butter ... 6 tbsps (you may also use butter)
Salt .......................... 2 pinches
Baking powder ......... 3/4 tsp
Cardamom powder ... 1/2 tsp
Milk ........................... 2 -3 tbsps



Method:
1. In a large mixing bowl take the ragi and gram flour.
2. Add baking powder, cardamom powder and salt. Mix everything with a spatula.
3. Next add the organic jaggery powder and mix it breaking all the lumps.
4. Now stir in the melted ghee or butter little by little and mix.
5. Add the milk , spoonful at a time until the dough can be gathered together into a lump.
6. Knead it lightly. Cover with a cling film and refrigerate for 30 minutes.
7. Remove the dough and taking small portions shape the cookies.
8. If you have designing moulds use them or you can press lightly with a fork.
9. Place on a parchment paper in a baking tray.
10. Bake in a pre-heated oven at 200 C for 12 to 15 minutes.
11. The cookies may appear to be soft but will change the texture after cooling.

Notes:
1. Use all the ingredients at room temperature
2. If using salted butter skip adding the salt.
3. The baking time may ry a bit depending on the type and size of the oven.
4. This quantity makes 12 cookies.

EMOJI COOKIES / KIDS PARTY SPECIAL


This is a very simple and easy to make cookie recipe, perfect for kids party. These are made by my grand daughter Maya.

Ingredients:
(All ingredients at room temperature)
All purpose flour - 3 cups
Sugar ................ 1 cup
Eggs ................. 2
Butter ............... 1 cup
Vanilla extract ... 1 tsp
Salt .................... 1/2 tsp
Baking powder ... 1/2 tsp
Baking soda ........ 1/4 tsp

Method:
 1. Mix the flour, salt, baking soda, baking powder and butter until it starts to clump together.
 2. Add the eggs, sugar and vanilla extract.
 3. Chill in the refrigerator for 30 - 40 mins.
 4. Roll out and cut into desired shapes.
 5. Bake at 400 F for 6-8 mins.
 6. Remove and cool them on a rack.

Ingredients for frosting:
Icing sugar..... 1 and 1/2 cups
Melted butter ... 2 tbsps
Vanilla extract .... 1 tsp
Lemon juice ...... 1/2 tsp
Milk ................. 1 or 2 tbsps
Food colouring ... 2-3 drops


Method:
 1. Combine all the ingredients and beat until smooth.
 2. If frosting is thick add little more milk, if it is thin add icing sugar to adjust.
 3. Add the colour and mix well.
Spread it on the cookies evenly and decorate them in any way you like.

NANKATAI / NANKHATAI / CARDAMOM FLAVOURED COOKIES


Nankhatais are basically shortbread biscuits flavoured with cardamom originating from the Indian subcontinent and very popular in India and Pakistan.
The word Nankhatai is derived from Persian word "Naan" meaning bread and "Khatai" from an Afghan word meaning Biscuit. In Afghanistan and Northeast Iran, these biscuits are called "Kulcha-e-Khataye." (Info- Wikipedia)
Nankhatais are very popular in Sindhi homes too. We usually make them during Sataen / Satam festival in the month of Shravan along with many other goodies.


Ingredients:
Maida ............. 1 cup
Icing sugar ..... 1/2 cup (if you like it too sweet add 1 tbsp more)
Desi ghee ....... 1/2 cup
Cardamom powder ... 1/4 tsp
Baking soda ...... 1 pinch
Salt .............. 1 pinch (optional - it actually balances the taste of all the sweet dishes)
Pistachios ..... 1 tbsp (sliced)

Method:

Collect all the ingredients and bring to room temperature.






In a bowl mix together Desi ghee and icing sugar.







Keep whisking until they are well blended.






Now tip in the cardamom powder, salt and baking soda.







Spoon in the maida little by little and keep whisking until all the maida is used up.






Knead the mixture lightly with your hands.







Take a small portion and make a round ball. Flatten it. Put the sliced pistachios on it and press lightly. Make all the nankhatais and place them on a greased baking tray.






Bake them in a pre-heated oven at 200 C for 18 to 20 minutes.





Remove the tray from the oven and allow the nankhatais to cool well. Store them in an air tight container.
