WHOLE WHEAT FLOUR YEASTED FLAT BREAD WITH NIGELLA SEEDS


This is a healthy version of flat bread that you can make and enjoy with delicious veg and non veg curries. Home made bread, fresh from the oven is irresistible. It has no preservatives too. Once you start baking your own breads you will never go for the ready ones bought from a store.
 You can also try out some variations each time you bake by sprinkling sesame seeds, flax seeds or some herbs for a change.


Ingredients:
Whole wheat flour .... 2 cups or as needed
Yeast .......................   2 tsps
Sugar .....................  2 tsps
Salt ....................... about 1/2 tsp
Olive oil or butter .... 2 tbsps
Nigella seeds ..........  2 tbsps  ( as needed )
Milk ....................... 3-4 tbsps for brushing

Method:
1. Take 1/2 cup luke warm water and add the sugar.
2. Sprinkle yeast granules, cover and set aside in a warm place until frothy.
3. Take the flour in a large mixing bowl.
4. Pour the activated yeast mixture little by litle and mix.
5. Add salt at this stage. Mix it.
6. Also add 2 tbsps of oil or melted butter.
7. Knead the dough well adding little luke warm water as needed.
8. Knead well until you get a soft and pliable dough.
9. gather it into a round ball shape and place it in the glass bowl.
10. Cover it with a cling film and set it aside for proofing until it is double in size.
11. Whole wheat flour takes longer time to rise. (about 2 hrs in summer and maybe more time in winter)
12. Knock the dough lightly to remove air bubbles.
13. Divide it into 5 or 6 pieces as desired and roll them out slightly thicker.
14. Brush the milk on the surface and sprinkle some nigella seeds.
15. Press them lightly so that they stick in the bread.
16. Set them aside on a parchment paper spread in a baking tray.
17. Keep them covered or in the oven (not heated) for 1 hour.
18. Now bake them in a pre-heated oven at 300 C for 10 to 12 minutes or until done.
19. Cool them and store in a zip lock bag or an air tight box.
20. Just before serving heat them directly over the gas flame on both sides using tongs.
21. Brush little ghee or clarified butter.
22. Serve them with any veg or non veg curry.

WHOLE WHEAT FLOUR BREAD WITH PUMPKIN SEEDS, CHIA SEEDS & FLAX SEEDS


This is a healthy bread made with whole wheat flour. These days many people avoid using All Purpose Flour (Maida) as much as possible. All the seeds (pumpkin, chia and flax seeds)  that we add to the bread makes it more healthier. You may even use olive oil instead of butter. Nothing can be better than a freshly baked healthy home made bread without any preservatives.


Ingredients:
Whole wheat flour ........... 2 cups
Yeast ................................ 2  and 1/2 tsps
Sugar .............................. 1 tbsp
Salt ................................ 1 tsp
Olive oil or butter  ........ 2-3 tbsps
Pumpkin seeds ............... 2 tbsps
Chia seeds ...................... 1 tbsp
Flax seeds ...................... 1 tbsp
Milk ............................ little for brushing

Method:
1. Take half cup luke warm water and add sugar. Spoon the yeast on top and cover. Set it aside to activate.
2. Now take the flour in a large mixing bowl. add the salt. Make a well in the middle
3. Pour the yeast little by little and knead the dough. Add more luke warm water if needed.
4. Now transfer the dough on to the clean and dry working platform.
5. Start kneading and knocking the dough very well.
6. Grease your hands with olive oil or melted butter and continue to knead for 8-10 mins. incorporating the oil / butter into the dough.
7. Gather the dough into a round ball and put it in a greased bowl covered with a cling flim for rising. 8. Since it is whole wheat flour it may take about 2 - 3 hours.
9. Now take the risen dough and flatten it with light hands into a rectangular shape.
10. Sprinkle half of the seeds, fold it, ( taking the top and bottom ends to the middle ) . Now do the same with the other two sides after spreading some seeds.
11. Now fold again and shape it like a loaf. Place it in a greased loaf tin sprinkled with little flour.
12. Cover it well and leave it again to rise until double. It may take 2 - 3 hours.
13. Carefully brush little milk or egg white and sprinkle some more seeds on top.
14. Bake in a pre-heated oven at 200 C for 22 to 25 minutes. The time may vary a bit so keep a check.
15. Allow it to cool before slicing.


Notes:
1. Make sure the ingredients are taken at room temperature.
2. You may increase the quantity of seeds to your liking.
3. My bread was baked in 22 mins. But the time and temperature may vary depending on the type of oven you are using.

BANANA BREAD / BANANA LOAF


This is a deliciously moist banana bread or loaf that you are going to fall in love for sure. It is very easy to make and whenever you have some over-ripe bananas just grab the opportunity and go for it. You could play with the ingredients a bit depending on the availability like the addition of walnuts, mixed nuts, choco chips, for flavours you can also try to add a bit of cinnamon or nutmeg... choice is yours. Serve it warm or cold.


Ingredients:
Bananas .............3 peeled and mashed (about 1 cup)
APF / Maida ..... 1 cup
Whole wheat flour ... 1 cup
Sugar ...................... 3/4 cup
Brown sugar ............ 1/4 cup (or organic jaggery powder)
Eggs ......................... 2
Butter ...................... 1/4 cup
Walnuts ................... 1/4 cup (small pieces)
Milk ........................ 3/4 cup
Lemon juice ............ 2 tbsps (divided)
Baking soda ............ 1 tsp
Salt ........................ 1/4 tsp
Vanilla essence ...... 1 tsp (you may use banana essence also)
(all ingredients at room temperature)


Method:
1. Mix 1 tbsp of lemon juice in the milk and set aside.
2. Mix 1 tbsp of lemon juice with the mashed banana and set aside.
3.Combine the flours, baking soda and salt. Mix well and set aside.
4. In a large bowl beat the butter and both sugars.
5. Add the eggs one by one and beat well. 
6. Add the essence.
7. Now add the flour spoonful at a time and little milk ( Milk and lemon juice mixture) in between and continue to beat until all the flour and milk are used up.
8. Fold in the mashed banana with a spatula. 
9. Add the chopped or crushed walnuts also while folding in the banana. 
10. This makes 2 smaller breads. Grease and line the loaf tins with butter paper and transfer the batter into them. If you have a large loaf pan you can bake it in one.
11. Bake it in a pre-heated oven at 200 C about 55 mins to 1 hour. Please note that the time may vary a bit from oven to oven depending on the size and type. Keep a check.
12. You can check the cake by inserting a tooth pick if it is baked perfectly.


Notes / Tips 
1. You may substitute the vanilla essence with banana essence.
2. Grind the sugar a bit if the granules are not fine. You can also use icing sugar.
3. You can also use organic jaggery powder instead of brown sugar.
4. The time of baking may vary a bit from oven to oven depending on the size and type of the oven used.
5. All the ingredients must be at the room temperature. 
6. You can add a little cinnamon or nutmeg powder if you like.
7. If you want it super moist the tip is to place the hot loaf tin in the freezer for a while.

GARLIC BREAD KNOTS ( Eggless Recipe)


Try out these home made eggless bread knots with the flavour of garlic in each bite. They are so light, fluffy and soft in texture. You can enjoy them for breakfast or as a snack at tea time.


Ingredients:
APF / maida ...... 2 cups
Dry yeast ........... 2 tsps
Sugar ................. 2 tsps
Salt ................... 1 tsp
Garlic powder or freshly crushed garlic .. 1 tsp
Pizza seasoning ........... 1 tsp
Olive oil ..................... 1 tbsp
Ghee .................... for brushing the buns


Method:

1. Take the flour in a bowl. Make a well and spoon the yeast and sugar in it. Add salt, garlic and olive oil on the side.









2. Pour lukewarm water on the yeast and mix well.









3. Knead to make a soft dough. Knead it for 2 minutes.









4. Cover it and set aside in a greased bowl for rising. It takes about 1 hour in summer and more time in winter.









5. Knock out the air bubbles from the risen dough and knead it lightly.










6. Remove it on to a floured surface.










7. Roll it out like a cylinder. Cut out desired size pieces using a sharp knife or thread.






8. Roll each portion into a thin rope .






9. Fold it carefully in the shape of a knot.







10. Place them on a greased baking tray or butter paper leaving little gap for rising.






11. Keep the tray inside the oven or covered well allowing the knots to rise for about 30 - 40 minutes.






12. Brush the knots with melted ghee and sprinkle the pizza seasoning over them.






13. Bake them in a pre-heated oven at 250 C for about 15 - 17 minutes or until done. 








Note: The baking time may vary depending on the size of the oven. So keep checking.

PULL APART PIZZA MONKEY BREAD


Here is a simple and delicious recipe of pull apart pizza monkey bread. The name sounds weird isn't it. It is simply called monkey bread because we don't cut it with a knife but just pull out small pieces and relish it.. I had seen this on the show "Mummy Ka Magic" on Food Food channel and wanted to try it out sometime. And look at the coincidence, this month in our group- "Shhhh Cooking Secretly" the theme chosen was "Baked". We are paired with another blogger who gives us 2 secret ingredients.
My partner for the month is Sujata Shukla. She blogs at, "Pepper On Pizza" She is a Chartered Accountant by profession and also a passionate foodie. Check out her blog for Indian as well as Global recipes. The two ingredients given to me were Cheese and Rosemary.


Ingredients:
Flour / Maida  ....  2 cups
Dry yeast ................. 1 tsp
Sugar ..................  1 tsp
Salt ..................... 1/2 tsp
Olive oil .. 2 tbsps
Basil leaves ........ few
Rosemary leaves .. few (optional)
Red bell peppers ... 1/4 cup (diced finely)
Olives ............. few
Cheese ............ 1/4 cup + extra for topping (grated)

For the sauce:
Tomatoes .... 2  (blanched)
Garlic ......... 1 tbsp
Chilli sauce ... 1 tbsp
Tomato ketchup .... 1 tbsp
Basil ......... few leaves (tear with hands)
Pizza seasoning .. 1 tsp
Olive oil .. 1 tbsp
Salt .......... to taste

To make the pizza sauce:
1.Heat oil in a pan, Saute the garlic and add the basil leaves, blanched and diced tomatoes.
2. Stir in the sauces mentioned in the list. Season with salt and pizza seasoning. Simmer until done.
3. Set aside to cool.

To make the Monkey bread:

1. Take the flour in a large bowl. Make a well in the middle and add the sugar and dry yeast. Add the salt and oil on the sides.







2. Knead the dough using lukewarm water. Knead it well for 5 minutes. Place it in a covered bowl until it rises and doubles up.







3 Now take the dough on the kitchen platform. Knock out the air bubbles. Flatten it with the help of a rolling pin. Spread the diced bell peppers and olives.






4. Knead it well to mix all the ingredients.










5. It might be a little sticky but don't panic..you can apply some oil to your hands while working on it.







6. Divide the dough into small portions.






7. Flatten each ball and stuff with a little cheese and close it shaping like a bun. Repeat this with the remaining dough.









8. Grease a ring mould or a Bundt pan. Place the prepared dough balls randomly.







9. Set aside until they double up in size.









10. Bake in a pre-heated oven at 250 C for about 22 to 25 minutes or until done. The time and temperature may vary a little depending on the size of the oven.






11. When they are done, demould the monkey bread and spoon a little pizza sauce , grate cheese over it while it is hot so that the cheese melts a little. Garnish with basil leaves, rosemary leaves and sprinkle some pizza seasoning over it.
