1 MINUTE MICROWAVE MUG CAKE ( Eggless Recipe)


This cake recipe is such a blessing when you have some unexpected guests and want to make quick dessert. You can divide the quantity into 2 microwave safe serving bowls instead of a mug so that you can serve a bowl each for everyone individually.

Ingredients:
Flour .... 2 tbsps
Sugar .... 1 tbsp
Baking powder .. 1/4 tsp
Salt .... a pinch
Chocolate chips .. 2 tbsps ( you can add 1 tbsp cocoa + 1 tbsp chocolate chips if you like a chocolate flavoured cake)
Jam .... 1 tbsp. ( I added apple jam )
Milk .... 2 tbsps
Oil ..... 1 and 1/2 tbsps


Method:
1. In a microwave safe mug mix all the dry ingredients with a spoon.
2. Add all the wet ingredients and mix well with a spoon or a small whisk until there are no lumps.
3. The cake will be double the size after baking so use a right size mug filling it half.
4..Place it in a microwave for 1 minute.
5. Remove and let it cool.

Note: depending on the type and the size of the microwave the time may vary by 5-10 seconds.You can bake it for 10 seconds more.

5 - MINUTE MICROWAVE BARFI


Delicious mawa barfi ready in 5 minutes !
You can also use it as a stuffing for sweet mawa gujiyas.

Ingredients:
Milk .... 3-4 cups-to make chena (paneer)
Vinegar or lime juice - 2-3 tbsp
Sugar ........ 1 cup
Milk powder ....1 cup
Cardamom powder ....1/2 tsp.
Saffron
Pistachios ... chopped (to garnish)
Almonds ..... chopped (to garnish)
Ghee .....1 tbsp.

Method:


1.Pour the milk in a glass bowl and mix the vinegar / lime juice.Place it in the microwave and heat it for 3-4 minutes to curdle it. (about 3 cups of full cream milk makes one cup of paneer.) Strain it well and set it aside to cool and then crumble it.(there should be no water left in the paneer)
2.In a bowl mix 1 cup paneer, 1 cup sugar, 1 cup milk powder, cardamom powder, saffron and ghee.
3. In a flat dish apply ghee and spread this mixture.

4. Sprinkle chopped pistachios and almonds on top.
5. Microwave it for 5 minutes. Let it cool and cut into pieces.

MOONG DAL PALAK (Microwave Version)



This is a quick microwave recipe of moong dal for days when we are short of time. It is ready in minutes.

Ingredients:
Moong dal .... 1 cup
Spinach/palak ... 60 gms (2 chunks frozen)
Green chillies .... 1 chopped finely
Garlic............... 1 tsp (optional)
Tomato ........... 1 small
Turmeric powder ... 1/4 tsp
Red chilli powder ... 1/4 tsp
Salt ................. to taste
Oil ................ 1-2 tbsp
Asafoetida ..... a pinch
Cumin seeds .. 1 tsp
Coriander leaves .. for garnishing.

Method:
1. Wash and soak the moong dal for a couple of hours.
2. In a microwave safe dish, put dal, tomato, green chilli, garlic, palak and 1 cup water. Cook it for 6-7 minutes.

3. Remove the dish and add 1 cup water again. Add a little salt and turmeric powder. Microwave it again for 5 minutes.

4. Take a small bowl and pour oil and add asafoetida and cumin seeds and microwave for 2 minutes. Add this tadka and red chilli powder to the cooked dal.
5. Stir it and cook for 1 more minute to incorporate the tadka flavours.




Garnish with coriander leaves and serve with rotis.
PS: you can also skip the tadka part and simply add bhuna jeera (roasted cumin)
