Here is the simple chana masala recipe which is cooked with besan. No onions and garlic have been added as some people skip them during fasting days and Navratras.
Ingredients:
Chana ... 1 cup
Besan .... 1 tbsp
Tomato puree .. made from 2 tomatoes
Grated ginger ... 1 tsp
Turmeric powder .. 1/4 tsp
Red chilli powder .. 1/4 tsp
Anardana powder or amchoor .. 1/2 tsp
Coriander leaves .. handful
Salt .. to taste
Oil .. 4 tbsps
For Chana Masala:
Coriander seeds ... 1 tsp
Cumin seeds ........ 1 tsp
Carom seeds ........ 1/4 tsp
Saunf / aniseeds ... 1/2 tsp
Pepper corns ....... 6-7
Cloves ............ 3-4
Cinnamon ...... 1 small piece
Black cardamom .. 1
For Chana Masala:
Coriander seeds ... 1 tsp
Cumin seeds ........ 1 tsp
Carom seeds ........ 1/4 tsp

Pepper corns ....... 6-7
Cloves ............ 3-4

Soak chana overnight or for few hours.
Boil them in a pressure cooker with a tea bag (to get the colour) and little salt.
If you don't have a tea bag you can make a small potli with 1 tsp of tea leaves tied in a muslin cloth.
Discard the potli and remove the chana in a bowl.

In a pan heat oil and add the besan.
Saute until light brown in colour and it gives a nice aroma.
Add 2 tbsps (or as per your taste) of the ground masala and stir fry.

Add the puree.
Season it with salt, turmeric powder and red chilli powder. Add water as needed and simmer for a couple of minutes.
Finally add some coriander leaves.

Garnish with ginger juliennes . Serve with rotis / naans / bhaturas
