CAKE POPS / KIDS PARTY RECIPES


These cake pops make a perfect snack for kids parties. You can make use of the left over cake or the trimmings left after icing your cakes to make these. It would be fun if you ask your kids prepare the pops during their vacation. You can see in the video how much my little twin grand daughters enjoyed doing it.
Ingredients: Sponge cake --- 250 gms (chocolate flavoured) Sponge cake .... 250 gms (strawberry flavoured) (you can also use plain vanilla flavoured cakes or the cuttings left over after icing any cake)) Butter cream frosting --- 1 cup in each cake or as needed Candy melts .................... As required (you can use melted chocolate also instead) Candy sticks .... As needed

Method:
1. Crumble the cakes.
2. Add 1 cup butter cream frosting in each one.
3. Adjust the consistency and add little more if needed.
4. Make small balls from the cake mix.
5. Melt little quantity of candy melts in the microwave.
6. Dip the sticks in it and insert into the cake pops.
7. Refrigerate these until they are firm.
8. Melt more candy melts for coating the pops.
9. Let it cool. Take each cake pop and coat it well.
10. Set them upright on a stand.
11. Refrigerate them until the coating is firm and crunchy.

EMOJI COOKIES / KIDS PARTY SPECIAL


This is a very simple and easy to make cookie recipe, perfect for kids party. These are made by my grand daughter Maya.

Ingredients:
(All ingredients at room temperature)
All purpose flour - 3 cups
Sugar ................ 1 cup
Eggs ................. 2
Butter ............... 1 cup
Vanilla extract ... 1 tsp
Salt .................... 1/2 tsp
Baking powder ... 1/2 tsp
Baking soda ........ 1/4 tsp

Method:
 1. Mix the flour, salt, baking soda, baking powder and butter until it starts to clump together.
 2. Add the eggs, sugar and vanilla extract.
 3. Chill in the refrigerator for 30 - 40 mins.
 4. Roll out and cut into desired shapes.
 5. Bake at 400 F for 6-8 mins.
 6. Remove and cool them on a rack.

Ingredients for frosting:
Icing sugar..... 1 and 1/2 cups
Melted butter ... 2 tbsps
Vanilla extract .... 1 tsp
Lemon juice ...... 1/2 tsp
Milk ................. 1 or 2 tbsps
Food colouring ... 2-3 drops


Method:
 1. Combine all the ingredients and beat until smooth.
 2. If frosting is thick add little more milk, if it is thin add icing sugar to adjust.
 3. Add the colour and mix well.
Spread it on the cookies evenly and decorate them in any way you like.

OATS AND APPLE PORRIDGE

 

A perfect breakfast option to start your day in a healthy way. Even kids will love it. A hot bowl of porridge is so comforting on a rainy day.

Ingredients:
Oats ...... 3/4  cup
Apples .... 1
Jaggery ... 1/4 cup (grated or crushed)
Cinnamon or cardamom powder .... 1/8 tsp
Salt ............. 1 pinch to balance the taste (optional)
Ghee or butter ... 1 tbsp

Method:
1. Melt butter or ghee in a pan and saute the oats.
2. Add 4 cups water and bring to a boil.
3. Tip in the jaggery and salt. Simmer for 5 minutes.
4. Now add the peeled and chopped apple pieces and continue to cook on low flame until done. Keep the apples slightly crunchy and do not overcook them.
5. For flavouring you can add cinnamon or cardamom powder.

Serves 2

CHAASHA MEIN DHABROTI / CRISPY BREAD SOAKED IN SUGAR SYRUP


This is a traditional Sindhi breakfast dish. We make it on special occasions when we have guests at home. Usually the bread slices are made whole or cut into triangular or rectangular shapes just by cutting them into two. I have given them a round shape using a cutter. The sides can be used to make masala bread or even bread crumbs after drying them for later use. If you are making for kids you can even cut out fancy shapes using different cutters.

Ingredients: 
Bread Slices ...6 or  as needed
Sugar - 2 cups
Water - 1 cup
Cardamoms - 4
Saffron - a pinch
Rose water .. few drops (optional)
Oil or ghee for frying
Pistachios... few for garnishing

Method:
1. Cut the bread slices in a round shape using a cutter or a bottle lid.
 2. Fry till golden brown and crisp.
3. Make a thick syrup with sugar, water, saffron and cardamoms. Add rose water after it is cooled.
4. Few hours before serving, place the bread coins in a flat dish, pour the sugar syrup over them with a spoon and let them soak for about 1-2 hours or until they are softer.
5. Garnish with sliced pistachios.

OATS PORRIDGE WITH CHOCOLATE COATED CAKE BALLS / KIDS BREAKFAST


Kids often refuse to have oats. We have to really be innovative and try out new dishes for them. This bowl of oats porridge garnished with chocolate coated cake balls will surely entice them to give it a try.

Ingredients:
Oats ...... 1 cup
Butter .... 1 tbsp
Milk ...... 2 cups or as needed. (you can use water + milk if you wish)
Vanilla essence ... 1 drop.(optional)
Sugar ................ 5-6 tbsps  (as per your liking)
Salt .... 1 pinch (to balance the taste)
Mango roundels .. for garnishing.

To make the chocolate coated cake balls.
Cake crumbs ..... 1 cup (use plain sponge cake)
Walnut powder ... 1 tbsp
Maple syrup or honey .. 1 tbsp (as needed to bind the crumbs)
Cooking / baking chocolate bar .... 100 gms

Method:



1. Crumble the cake. Add walnut powder and mix.







2. Add the honey or maple syrup and mix well to get a binding texture. If you are using a moist cake you may not need to add any binder..Make tiny marble sized balls.Set aside.





3. Using the double boiler method, melt the chocolate bar. Make sure the spatula and the bowl are dry.







4. Maintain medium heat and stir with a spatula until smooth.








5. Close the gas and still keep stirring for a while to remove any air bubbles.






6. Now using a fork or a tooth pick dip the balls in the melted chocolate.





7. Place them on the parchment paper in a tray. Refrigerate until they are firm.






8. Now melt the butter in a sauce pan and saute the oats for a minute.






9. Add one cup water and bring to a boil. Once they start cooking reduce the heat and simmer. Add sugar and a pinch of salt. When they are half done add the milk, vanilla essence and cook further for 5-6 minutes on low flame until you get the required consistency. Allow the porridge to cool.



10. Garnish with chocolate balls and mango roundels after it is cool enough at the room temperature or even better if it is chilled in the refrigerator.

EASTER BUNNY BREAD ROLLS




Recently I saw the picture of these Easter Bunny Bread Rolls .. perfect for the season... I thought I'll give it a try. Aren't they cute ???

Ingredients for the dough:

Maida/white flour ........... 2 cups
Fresh yeast ... 1 cube (if using dry yeast-1 tablespoon)
Salt ............ 1 tsp.
Sugar ......... 2 tsp.
Ghee/butter .......... 1 tsp.
Luke warm water for kneading.( you may use milk + water )


Method:
1. Take the flour, make a well in the middle. Put only the sugar and crumble the yeast on top of the sugar.
2. Sprinkle the salt on the side (there should be no contact between the yeast and the salt)
3. Knead the dough using the luke warm water.Add the ghee and knead it well for 2-3 minutes.
4. Cover it and leave it in a warm place till it is risen to double.
(about 15-20 mins. in summer....in winter it takes a little longer)
5. Knead the dough again and make buns.
6. Using scissors give a snip on two sides to make the ears.
7. Pierce with a straw for eyes.
8. Leave them for 5 minutes to rise.
9. Bake them in a pre-heated oven on medium temperature (200 degrees) for
8-10 minutes or until done.

Note: The temperature may vary a few minutes depending on the size and type of the oven.

APPLE & KIWI TARTS ( Eggless )


I had some left over apple and kiwi halwa. I made these little tarts and used it for filling. They tasted better than eating the halwa by itself. 

Ingredients for Halwa :
Apples .... 2
Kiwis ..... 2
Sugar ..... 1/2 cup ( you can increase or reduce the quantity according to your taste )
Cardamom powder ..1/4 tsp
Ghee .... 2-3 tbsps
Nuts ... for garnishing ( you can use cashews / pistachios / almonds )

Method:
1. Peel and grate the apples.
2. Peel the kiwis and remove the seedy part (core). Grind them in a mixie.
3. Heat 2 tbsps ghee and saute the fruits together until the liquid dries up.
4. Add the sugar and cardamom powder and keep stirring until the halwa is thick and gets a shine.

 Ingredients For Tarts:
Flour .. 1 cup
Butter .. 6 tbsps
Sugar ... 2 tbsps
Salt ..... 1/4 tsp ( or little less )


Method:
1. Combine all the ingredients to make a soft dough.
2. Roll out the dough.
3. Grease the tart moulds with removable bottom and sprinkle a little flour.
4. Place the rolled dough over the moulds pressing it gently to form a shape. 
5. Cut out the excess dough from the sides. Prick the tarts all over with a fork.
6. Bake them in a pre-heated oven until golden brown. ( about 12 - 15 mins.)
7. Remove from the oven and let them cool before filling them.
8. Fill with the apple & kiwi halwa and sprinkle a little pistachio powder over it . You can also decorate with a little cherry if you have it.

Note: The baking time may vary according to the size and type of the oven..

PIZZA CUPS



Make these tiny pizza cups for your kids party. The procedure is the same like making pizza .

For the dough:
All purpose flour / maida ....  1 cup

Fresh yeast .................... 1/2  cube (If using dry yeast - 1 tsp )
Sugar ........................... 1 tsp
Salt .............................. 1/4 tsp
Olive oil ................... 2 tbsps


1. Take the flour in a flat vessel . Make a well in the middle and crumble the yeast. Add sugar. The salt and  1 spoon of olive oil should be added on the sides. (The salt should not come in contact with the yeast ).
2.Take luke-warm water and knead the dough starting from the middle portion and gradually mix everything.

3. Using a little more olive oil knead the dough well for 2-3 minutes.

4. Oil a dish and place the dough in it well covered in a warm place to rise. It takes about 20 - 30 minutes. In winters it may take longer.


To make the Sauce
Tomatoes ... 1-2
Garlic ......... 1 tbsp
Chilli sauce .. 1 tbsp
Tomato ketchup .. 1 tsp
Oregano / basil ... 1 tsp
Salt ........... to taste
Olive oil .... 2 tbsps


1. Heat oil in a pan and saute the garlic.
2. Add the blanched and chopped tomatoes and simmer to cook.
3.Add the sauces and tempering. Set aside to cool.

To make the cups:


1. Take the risen dough and knead it well again.
2. Spread a little portion with your fingers and press it in the greased cups.
3. Leave for a few minutes. Half bake the cups in a pre-heated oven.
4. Remove them and let them cool.

To assemble the pizza cups:
Grated cheese
Olives
Capsicums ( you may use any topping you like )


1. Place the pizza cups in a baking tray.
2. Fill them with the prepared sauce and finely chopped capsicums.
3. Spread the grated cheese and place a piece of olive on top.
4. Grill them in a pre-heated oven for 4-5 minutes or until done.

Since the cups are half baked it does not take long.
You can even place them in colourful paper cups for the kids.
