CORN & POTATO PARATHA


We all love to eat aloo parathas.. for a change I just added some corn.  Parathas with any kind of filling make a complete meal. Just serve with curd and pickle.


Ingredients:
Wheat flour  2 cups
Ghee / oil ... 2 tbsps
Ajwain ....... 1/4 tsp
salt ........... to taste
Water .... to knead.
Knead the dough and set it aside.


Filling:
Sweet corn ... 1/2 cup
Potatoes ...... 2-3
Green chillies ... 1-2
Garam masala ..1/2 tsp
Red chilli powder ... 1/4 tsp
Coriander leaves .. handful
Amchoor powder .. 1/2 tsp
Salt .. to taste
Oil to make parathas

Method:
1. Boil the potatoes, mash them and set aside.
2. Boil the sweet corn and crush it slightly. You can use the ready corn from the tins.
3. Mix all the spices, salt, green chillies and coriander to make the filling.
4. Roll out 2 small rotis. Spread the filling on one and place the other on the top and press the edges to seal them.
5. Roll out again and roast it on the griddle / tawa adding little ghee or oil to make it crisp.
Serve hot with dahi / pickles
