Cheese toast is a snack loved by everyone. You can enjoy it at any time of the day. This recipe is with a little twist. I have added moringa leaves to the cheese mixture. This way you can make your kids eat some healthy greens too. You may pair it with a bowl of soup and enjoy a hearty brunch.
INGREDIENTS
Bread slices ... 2 or as needed
Cheese ............ 1/2 cup (grated)
Tomato ......... 1 small (remove the seeds and cut the fleshy part into small pieces)
Moringa leaves ..... handful
Onion ................... 1 small (finely chopped)
Green chilies .... 1 or 2 (crushed)
Pizza seasoning .... 1 tsp
Butter .................. as required
METHOD:
1. In a bowl mix together grated cheese, chopped onion, tomato, green chillies and moringa leaves.
2. Add the pizza seasoning and salt as needed. Mix them well.
3. Butter the bread slices and spread the mixture on them.
4. Toast them in a pre-heated oven until done.
5. Serve them immediately.
Note: You can replace the green chillies with red chilli flakes also or skip adding them if you are making for kids.
This is such a delicious cheesy tuna sandwich, so flavourful and filling. Perfect for a quick lunch. All you need is few ingredients like canned Tuna, mayonnaise, cheese, some herbs for flavouring and in a jiffy itis done. You can serve with some French fries or wafers.(chips)
1. Mix all the ingredients except butter in a bowl. 2. Slice the burger buns. Spread some butter on them. 3. Spoon the mixture on the bottom slice of the burger. Spread some butter on the other slice as well. 4. Grill them until done. Towards the end you can add some more grated cheese on top if you like them more cheesy.
5. Serve them immediately.
Note:
1. You also replace the buns with bread slices.
2. I have used celery seeds. You may also used finely chopped fresh celery if available.
3. Spice level can be adjusted to your liking and you may add finely chopped green chillies also.
4. Pizza seasoning also tastes very good for variation.

Healthy and delicious vegetable sandwiches made with multigrain bread and a filling of hung curd, honey, home made eggless mayonnaise, carrots, cucumber, tomato, bell pepper seasoned with mustard sauce, black pepper and red chilli flakes.- make and enjoy them any time of the day !
Ingredients:
Multigrain bread ....... 4 slices or as required
Carrot ....................... 1 small
Cucumber ................ 1 small
Tomato .................... 1 small.
Green Capsicum ..... 1 small
Honey ................... 3 tbsps
Hung curd ............ 3 tbsps
Eggless mayonnaise .. 1 tbsp
Mustard sauce ........ 1 tsp
Salt ......................... to taste
Black pepper powder .. 1/4 tsp
Red chilli flakes ........... 1/8 tsp
Method:
1. To make the hung curd take a muslin cloth and put 2 cups of yogurt. Hang the bundle on the tap for 5-6 hours until the water is completely drained out.
2. Wash the carrot and cucumber, peel and grate them.
3. Remove the seeds and water from the tomato and cut the outer part into tiny pieces.
4. Cut the capsimum into tiny pieces.
5. Now take the hung curd into a larger bowl and add all the ingredients. Squeeze out the water from the cucumber. Mix everything together.
6. Spread the filling on a bread slice and place another one on top.
7. Cut them into half or quarters if the bread slices are large.
Serve them any time of the day.
Fast food like burgers and subway sandwiches have become very popular these days. Making your own subway sandwich is not a difficult task. Just get all the ingredients of your choice and assemble it just the way you like it. It has a lot of stuffings and is really very filling. It is also a perfect lunch box meal.
I have used sauteed chicken with bell pepper. You can even use ham slices or shredded meats.. choice is yours. Additional garnishings like olives, pickled jalapenos taste good too. Ingredients:
Bread rolls ... as needed
Chicken ..... 100 gms
Bell peppers ... few strips of different colours.
Pizza seasoning ... 1 tsp
Salt ................. to taste
Oil ................... 2 tbsps
Lettuce leaves .. as needed
Cucumber slices ... few
Tomato slices ...... few
Garlic mayonnaise .. for spreading
Mustard sauce..... as needed
Tomato ketchup ... as needed
Cheese slices or grated cheese .. as needed
Method:
1. Heat oil in a pan and saute the chicken strips with garlic and salt.
2. It will just take a couple of minutes to cook and now you tip in the bell pepper strips. Season with pizza spice mix.
3. Now to assemble the sandwich slit the bread roll.
4. Spread a little garlic mayonnaise, place the lettuce leaves and sprinkle some cheese if needed.
5. Spoon the prepared chicken strips. Top it up with the cucumber and tomato slices. Squeeze some mustard sauce and tomato sauce as per your liking.
6. Carefully push all the stuffing into the slit bun.
7. Serve immediately.
Mini pita sandwiches or pockets make a perfect snack to serve in parties. It is a better option than fried snacks and quite filling too.
Ingredients:
Chicken ..... 200 gms (boneless)
Ginger garlic paste .. 1 tbsp
Hung curd ............. 1 tbsp
Red or orange food colour .. a pinch
Tandoori masala powder .. 1 tsp
Red chilli powder ......... 1/4 tsp
Salt ................ to taste
Oil ............. 1 tbsp
Mini pita breads .. as needed
Chilli garlic sauce ... 3-4 tbsps
For kachumber:
Onions ...... 1 cup finely sliced
Vinegar or lemon juice .... 2 tsps
Salt ........ to taste
Coriander leaves ... finely chopped
(Soak the sliced onions in salt water for 10 minutes. Squeeze out from the water and add salt, vinegar and coriander leaves. Mix well.
Chicken Tikka :
1. Clean the boneless chicken cubes.
2. Marinate them with a mixture of hung curd, salt, red colour and tandoori masala powder. Set aside for few hours.
3. Grill the chicken pieces or pan fry them with one tbsp of oil until done.
To assemble:
1. Slit open the mini pita breads carefully.
2. Spread the chilli garlic sauce on them. You may also use any other sauce or chutney if you like.
3. Spoon a little kachumber.
4. Stuff them with the chicken tikka pieces.

I could never imagine making a raita sandwich, until I ate one. Believe me it tasted so good and definitely healthier because there are no fatty things in the stuffing. This is my bhabhi's innovative idea of using the left over raitas. You may use any raita of your choice. Do give it a try, I'm sure you are going to like it too. Here I am making with corn raita. You can have many variations like boiled potato, green peas, cucumber etc etc.
How to make Corn Raita .... see - HERE Method:
1. Take 2 slices of brown / white bread.
2. Drain out the excess liquid from the raita and spread it on one slice. Place the other one on top.
3. Apply butter on the slices and toast it in a sandwich toaster or you can do it on the griddle also pressing the slices with a spatula on medium flame until crisp and golden brown.

Today I had made Upma for breakfast and had a bowlful of leftovers. Usually we make pesarettu with upma stuffing. I thought let me try out a sandwich today. It was really very delicious. I just added a little finely chopped onions and coriander leaves which you can even skip. I am sure kids would love these sandwiches.
Ingredients:
Upma .... 1 small bowl
Onion ..... 2 tbsps (finely chopped)
Coriander leaves .. 2 tbsps (finely chopped)
Bread slices ...... as needed
Butter ....... to spread on the bread (optional - I did not use as there is oil in the upma)
Tomato ketchup ... to serve with the sandwiches.
Method:
1. Spread the upma on the bread slices and add finely chopped onion and coriander leaves on top.
2. Place another slice on top and toast them in a sandwich toaster.
Ingredients:
Macaroni ... 1/2 cup (boiled)
Eggs ......... 2
Onion ...... 2 tbsps (finely chopped)
Green chillies .. 1 (finely chopped)
Coriander leaves .. 2 tbsps
Cheese (grated).....1 tbsps (optional)
Salt ...... to taste
Bread slices ... as needed
Oil ..... 2 tbsps
Method:
1. In a pan add oil and saute the onion until translucent.
2. Add the chillies, coriander leaves and salt.
3. Add the eggs and scramble them.
4. Mix the boiled macaroni and stir.
5. Add the grated cheese and stir until it melts.
6. Spread the filling on a bread slice. Place another one on top and grill the sandwiches.
Note: You can skip green chillies if you are making for kids. You may also add black pepper if you like.
You can also use any left over pasta.
