Ingredients:
Quinoa ... 1 cup
Yellow moong dal .. 1/2 cup
Carrots ... 2-3 tbsps (diced)
Onion ..... 1
Cherry tomatoes .. 8
Green chillies .. 1-2
Coriander leaves ... handful
Garlic ..... 1 tsp
Ginger .... 1 tsp (grated)
Turmeric powder .. 1/2 tsp
Red chilli powder // 1/4 tsp
Salt ... to taste
For Tempering:
Mustard seeds ... 1 tsp
Cumin seeds .... 1 tsp
Asafoetida ..... a pinch
Curry leaves .. few
Oil .... 2-3 tbsps
1. Soak the quinoa and moong dal separately.
2. In a pressure cooker add the oil and tempering ingredients.
3.When they crackle, add the garlic, ginger and onion and saute for a minute.
4. Now add the carrots, green chillies, tomatoes and stir fry for half a minute.
5. Add the washed quinoa, dal, salt, turmeric ad red chilli powder.
6. Add about 3 cups of water and stir everything together.
7. Close the lid and cook for 3-4 whistles. Off the gas and let it cook in its own steam.
Serve with raita, papad pickle..

DeleteI love how we've been able to incorporate quinoa into our diet using Indian recipes too. Making a moong dal and quinoa khichdi is a wonderful idea. Light on the tummy and yet filling. Awesome recipe Shobha.
