CHICKEN FINGERS




A simple and  delicious chicken snack .. definitely a kid's delight ! Boneless chicken fingers marinated in curried lemon sauce and coated with egg, flour and bread crumbs. It can be fried or baked. The fried version is more tastier, but if you want to avoid deep frying you can bake them. Serve them with tomato ketchup or tartar sauce.

Ingredients: 
Chicken fillet ...  250 grms. Cut into long strips
Lemon juice .... 1-2 tbsps
Curry powder ... 1 tsp (optional)
Black pepper ... 1 tsp
Paprika ............. 1 tsp
White flour ... 1/4 cup
Bread crumbs .. 1/4 cup
Eggs ........... 1
Salt ............... to taste
Oil ....... for frying




Method:

1. Clean the chicken strips and marinate with lemon juice, salt and curry powder. (at least for 1 hour ).  Beat the egg and mix with the marinated chicken strips.


2. Mix salt and the two peppers with the flour. Spread it on a plate. Spread the bread crumbs on a second plate.


3. Dip the chicken pieces first in the flour and then in the bread crumbs.


4. Keep the chicken strips ready and heat the oil in the meantime.


5. Deep fry them on medium flame  turning them until crisp. ( about 5-6 minutes) and remove on a paper towel to drain the extra oil.






 
Note: I marinated them overnight. They taste better if marinated for a longer time.If you want them spicier you can increase the pepper or sprinkle a little on top after frying when it is still hot.
