Spinach (palak) .... 1 bunch
Soya chunks .......... 1 cup
Yogurt .................. 3-4 tbsps
Onions .................. 2
Green chillies ........ 1-2
Tomato ................. 1
Mint leaves ........... handful (optional)
Coriander leaves ... handful
Ginger garlic paste ... 1 tbsp
Cumin seeds .......... 1 tsp
Turmeric powder ... 1/4 tsp
Coriander powder .... 1 tsp
Cumin powder .......... 1 tsp
Salt ................. to taste
Oil
Method:
1. Soak the soya chunks in hot water for 1 hour. Squeeze out the water completely and marinate them with yogurt, salt, turmeric powder and a little ginger garlic paste.
2. Wash and chop the palak leaves. In a pan heat a little oil.Crackle the cumin seeds and add one sliced onion. Stir fry and add a little salt and palak and simmer for a few minutes.
3. Grind together (coarsely) one onion, mint and coriander leaves and green chillies
4. Heat a little oil again and stir in this mixture. Add the ginger garlic paste, tomato and the dry masalas. Stir it for 3-4 minutes and add the tomato and the marinated soya chunks. Simmer for 6-7 minutes stirring in between until the soya chunks are cooked.(sprinkle a little water if needed)
5. Mix the cooked palak and again simmer for a minute.
