LEMONY RICE NOODLES. ( UPMA STYLE)


This is a very simple and easy dish made with rice noodles also known as angel hair noodles.They cook very fast. All you have to do is leave them in the hot water for 5 minutes and drain them. If you boil them they become mushy.This recipe is like lemon rice. just add tadka (tempering) and lemon juice to the noodles and you have a dish ready in a jiffy.

Ingredients:
Rice noodles ... 1 pkt.
Lemon juice..... 2 tbsps
Turmeric powder... 1/4 tsp
Green chillies ...... 1-2
Coriander leaves .. handful
Salt ...  to taste

For Tempering
Mustard seeds ... 1 tsp
Cumin seeds ...... 1 tsp
Urad dal ............ 1 tsp
Peanuts ............. 2 tbsps
Asafoetida .......... a pinch
Broken red chillies .. 1 (optional )
Curry leaves ......... few
Oil .... 2-3 tbsps


Method:

1. Boil water in a pan with salt and 1 tbsp oil. Drop the noodles and leave them covered for 5 minutes.

2. Drain them and run under cold water to avoid them from sticking.

3. In a pan heat oil and add the tempering ingredients.

4. When they crackle, add the noodles, a little salt, turmeric and lemon juice. Stir carefully to blend the tempering evenly.

5. Garnish with coriander leaves. Serve hot.

  10. Can they be eaten cold, I am forever searching for kids lunch box items. I tried rice noodles before but they were sticking to each other after cooling, the lunch boxes came home as is. This looks too good to miss.

    1. Yes these lemony noodles taste good even when they are cold. To avoid making them sticky you run them under cold water while draining out water. Cooking also has to be done carefully as they are very thin.
