SANDHYALA GAJROON (Sindhi Carrot Pickle)


This is a traditional Sindhi carrot pickle which is mildly spiced. It tastes best when prepared with mustard oil. In winters we can add fresh green garlic as well.

Ingredients:
Carrots .... 2
Mustard seeds .... 1 tbsp. ( Ground coarsely)
Turmeric powder ... 1/4 tsp
Red chilli powder .... 1/2 tsp.
Salt ......... to taste
Mustard oil ....... 2 tsp.
Vinegar ............ 2 tbsp.


Method:



1. Peel the carrots and cut them into long 2" pieces.
2. Mix all the above ingredients with the carrots.
3. Put them in a jar. Pickle will be ready in 2-3 days.
Note: If you don't have mustard oil you may use any cooking oil. But the pickle tastes better with mustard oil.

    1. How many days before this gets spoilt in the open ?

    2. Are we supposed to store this in the fridge ?

    1. Yes, it has to be stored in the fridge as it has very little oil.
