The dry roasted spices have to be taken in a large quantity. If cooked dal is 1/2 cup the masala should be 1/4 cup. The water content is not much in the filling so the kachoris stay good for a few days. We have the sweet version of this in Rajasthan called Mawa Kachoris.
Ingredients:
For the Filling :
Urad dal ..... 1/2 cup
For the Masala:
Saunf / aniseed ... 1 tbsp
Cumin seeds ...... 1 tsp
Coriander seeds .. 1 tbsp
Cardamoms ...... 3-4
Cloves ....... 3-4
Cinnamon stick ... 1 small piece
Dry red chillies .. 2-3
Turmeric powder .. 1/2 tsp
Salt ... to taste
Sugar .. to taste
Asafoetida ... 2 pinches.
For the Dough:
Maida ... 1 cup
Wheat flour .. 1/2 cup
Oil ..... 2-3 tbsps
Salt .... to taste
Water .... to knead.
Oil .... to fry
Method:
1. Soak urad dal for 2-3 hours. Drain the water and cook it with very little water. Dal has to be like half cooked, grains separate and not mushy.
2. Dry roast the Saunf, cumin seeds, coriander seeds, cardamoms, cloves, cinnamon stick and dry red chillies. Grind them coarsely.
3. Mix the dry ground masala and turmeric powder, salt, sugar and asafoetida with the urad dal. ( the proportion of dal and masala should be 2:1 ( 1 cup cooked dal + half cup masala )
4. Knead the dough adding oil and water as needed to make a medium soft dough.Cover and rest it for an hour. ( If the dough is very stiff the masala comes out while rolling the kachoris)
5. Roll out small puris, spoon the dal filling and seal the edges making a bundle. Flatten it and roll it very lightly taking care that it does not open up.
6. Drop them into medium hot oil. Spoon the oil on top of the kachoris to puff them up. Reduce the gas and fry the kachoris on a low flame to make them crisp.
Serve them with sweet chutney
Note: The quantity of the chillies can be adjusted according to your liking.
