This is a popular Middle Eastern salad. It has now become very popular in the rest of the world as it is very nutritious and healthy.
Ingredients:
Bulghur ( crushed wheat ) ... 1/2 cup
Parsley ......................... 1/2 cup
Mint .......................... few leaves
Spring onion ............... 1/4 cup
Tomatoes .................. 2
Onion ...................... 1 small
Lime juice ........... 2 tbsps
Zaatar ................... 1 tbsp (optional .. I like to add)
Olive oil ............ 2-3 tbsps
Black pepper..... 1/4 tsp
Salt .............. to taste
1. Soak the bulghur in hot water for a few hours. (If it is not available you can use couscous) Drain the water well.
2. Chop the parsley finely removing the stalks and also the tomatoes, onion, spring onion and mint into small pieces.
3. Combine all the ingredients and mix the olive oil, lime juice, black pepper, salt and zatar. The original recipe does not have zaatar, but I love the tangy flavour of this Arabic spice.
For variation you can also add cucumber.

Meena, couscous and bulghur are available @ Hypercity..in case you don't find them try with crushed wheat..if it is very coarse then give one boil and strain it...alternately you may try out with thick wheat rava/sooji.
