Ingredients:
Moong dal .... 1 cup
Spinach/palak ... 60 gms (2 chunks frozen)
Green chillies .... 1 chopped finely
Garlic............... 1 tsp (optional)
Tomato ........... 1 small
Turmeric powder ... 1/4 tsp
Red chilli powder ... 1/4 tsp
Salt ................. to taste
Oil ................ 1-2 tbsp
Asafoetida ..... a pinch
Cumin seeds .. 1 tsp
Coriander leaves .. for garnishing.Method:
1. Wash and soak the moong dal for a couple of hours.
2. In a microwave safe dish, put dal, tomato, green chilli, garlic, palak and 1 cup water. Cook it for 6-7 minutes.3. Remove the dish and add 1 cup water again. Add a little salt and turmeric powder. Microwave it again for 5 minutes.
4. Take a small bowl and pour oil and add asafoetida and cumin seeds and microwave for 2 minutes. Add this tadka and red chilli powder to the cooked dal.
5. Stir it and cook for 1 more minute to incorporate the tadka flavours.
Garnish with coriander leaves and serve with rotis.
PS: you can also skip the tadka part and simply add bhuna jeera (roasted cumin)

DeleteI have never cooked dal in microwave in fear that it will froth nad boil over. This is a great way to cook dal in a hurry.
