CORIANDER RICE


Coriander rice can be  prepared in two ways - one with ground coriander leaves along with the onions and masalas and the other with finely chopped coriander leaves. I prefer the second one. The aroma of fresh leaves makes the rice so flavourful.

Ingredients:
Cooked rice ..... 2 cups
Coriander leaves .. 1 cup or more ( finely chopped )
Onions ........... 1 small (chopped finely)
Green chillies .. 1-2
Ginger .......... 1 tbsp (grated)
Garlic paste ... 1 tsp
Cumin powder .. 1/2 tsp
Coriander powder .. 1/2 tsp
Turmeric powder .. 1/4 tsp
Salt
Oil

Tempering:
Mustard seeds .... 1 tsp
Cumin seeds ....... 1 tsp
Asafoetida ........... a pinch
Dry red chillies .... 1
Curry leaves ........ 1 sprig
Urad dal .............. 1 tsp
Peanuts .............. handful

Method:
1. Cook the rice adding a little salt. Drain and set aside. (You can use the left-over rice too)
2. In a pan heat a little oil and add the tempering ingredients.

3. When they crackle, add the onion, ginger, garlic and green chillies. Saute for a minute.

4. Now add the coriander leaves and the spice powders.

5. Tip in the rice and stir well to blend with the masalas.
Serve hot.
