This is the most popular breakfast, an Indian version of scrambled eggs prepared with the addition of onions, tomatoes and spice powders. You can enjoy the bhurji with rotis or bread.
Ingredients:
Eggs .... 4
Onions ... 1 cup (finely chopped)
Green chillies .. 2 (finely chopped)
Tomato ... 1 (cut into small pieces)
Coriander leaves ... handful
Turmeric Powder ..... 1/4 tsp
Coriander powder .... 1 tsp
Cumin powder ........ 1/2 tsp
Garam masala powder ... 1/2 tsp
Red chilli powder .. 1/4 tsp (optional)
Salt ....................... to taste
Oil ................. 4 tbsps
Method:
In a pan add oil and saute the onions.
Add the chopped tomatoes and green chillies.
Stir fry until the tomatoes are cooked. Now add the spice powders and salt.
Break the eggs and put them in the onion masala . Stir until the bhurji is done.
Garnish with coriander leaves.
You can also serve the bhurji on healthy Mini Multigrain rotis. To make these rotis mix equal amout of wheat flour, soya flour, ragi flour or any flour available. Knead and make rotis.
Spoon the bhurji on them and serve. Kids will love these.
This is an easy to go dish. If I don't feel like making anything , egg/ paneer bhurji is one such dish that makes everybody feel happy. Egg bhurji on those mini chapatis look good
