PALAK PURI / SPINACH PURI


Puri is a very popular deep fried Indian flat bread mostly taken for breakfast. It can be made plain or with many variations. Spinach is loaded with nutrients and I like adding it to most of my dishes. I have sauteed the spinach lightly and added to the puri dough. You may just use whole wheat flour or mix some maida or any other flour. These delicious puris can be had without any accompaniment too.. just with curd and pickle or even munch them with masala chai.


Ingredients:
Whole wheat flour ... 1 and 1/2 cups
Spinach .................... 1 cup (chopped)
Kasoori methi ......... 1 tbsp (fresh methi can be used if available)
Green chillies ........ 1 (crushed or chopped very finely)
Garlic paste .......... 1 tsp
Crushed cumin seeds .. 1 tsp
Salt ...................... to taste
Oil


Method:
1. In a pan heat one tbsp. oil and add garlic paste.
2. Saute and add the chopped spinach, kasoori methi and green chillies.
3. Add salt to taste and crushed cumin seeds. Stir for a minute.
4. In a bowl take the flour and add the prepared spinach.
5. Check the salt and add a little if needed.
6. Mix it well and knead the dough adding little water or curd.
7. Roll out small puris and deep fry them.

  4. This Spinach Puri surely looks tempting and delicious. I have been using kasuri methi in making puris but have never used spinach. Will try this way too to may nutritious puris for breakfast. Nice post.

  5. Beautifully made palak puri. Perfect for the season when we get wonderful palak now. I now know what to make with the huge bundles of palak hubby brought.

  7. when the kids were younger and reluctant to eat palak, I used to puree the blacnhed greens into the atta. this is a different yummy kind of puri ! - Kalyani

  8. I too make palak puris but with blanched and pureed palak,now this chopped version seems to be an easier knack when pressed for time..will try this when I make palak puris next time
