OATS KHICHDI


Khichdi is one of the healthiest one pot meal as it has all the healthy ingredients.This version is even more healthier as I have used oats instead of rice. It tasted as good as the khichdi made with rice. It is an easy meal option made with any vegetables you have at home. It can just be relished with some curd, pickle and papad.

Ingredients:
Oats .............. 1 & 1/2 cups
Moong dal .... 3/4 cup
Carrot ............ 1/4 cup (diced)
Green peas ..... 1/4 cup
Red, yellow and green bell peppers .. 1/4 cup (mixed)
Tomato .............. 1
Green chiilies ... 1 or 2
Coriander leaves ... handful
Turmeric powder .... 1/4 tsp
Cumin powder ....... 1/2 tp
Red chilli powder ... 1/4 tsp (optional)
Asafoetida ............. 1/8 tsp (add as per your liking)
Cumin seeds .......... 1/2 tsp
Oil ........................ 3 tbsps
Ghee ................... 1 tbsp

Method:
1. Soak the moong dal.
2. Cut all the vegetables and set aside.
3. In a pan heat half of the oil and roast the oats for a minute stirring continuously. Remove them in a bowl.
4. Heat the remaining oil and add the cumin seeds and asafoetida.
5. When they crackle, tip in the tomato and the diced vegetables.
6. Add salt, turmeric, cumin powder, green chillies and stir fry a little.
7. Now add 4 cups of water and bring to a boil. If you like a softer consistency add half cup more.
8. Stir in the roasted oats and moong dal.
9. Let it cook on medium flame until it is is done.
10. Finally add the coriander leaves and a tbsp of ghee and stir.
11. Serve hot.

Note: you can also use a pressure cooker for this. In that case reduce the quantity of water . 3 and 1/2 cups should do.

OVERNIGHT OATS WITH FRUITS / HEALTHY BREAKFAST


Oats is a perfect and healthy option for breakfast. I usually make sweet and savoury oats porridge. Overnight oats is another lovely breakfast option. Just soak the oats with coconut milk or normal low fat milk.  Greek yogurt, honey and seasonal fruits and if you like you can also mix some flaxseeds, chia seeds, crushed walnuts etc etc..Serve chilled .You can also add some corn flakes just before eating for some crunchiness.



Ingredients:
Oats ... 1/4 cup
Greek yogurt .... 1/4 cup
Coconut milk .... 1/4 cup
Honey ................ 1 tbsp 
Chia seeds ......... 1 tbsp
Flaxseeds .......... 1 tsp
Mixed fruits .... as needed 
(I have used banana, mango, apple and pomegranate)


Method:
1. Soak the oats with whipped Greek yogurt, coconut milk and honey. Refrigerate overnight.
2. Soak chia seeds in water and refrigerate until use.
3. In the morning before serving peel and cut the fruits. 
4. Take glasses or mason jars for serving.
5. Layer the fruits, soaked chia seeds and soaked oats.Sprinkle the flaxseeds between each layer.
6. Serve chilled.
Note: If the soaked oats are thick you can add some milk or coconut milk to get the desired consistency.

CRISPY CORN CUTLETS STUFFED WITH PANEER AND DRY FRUITS / STUFFED CORN PATTIES / STUFFED CORN TIKKIS


Festive season is here and we have so many friends and relatives visiting us. Here is a nice appetizer / snack to serve along with many other goodies. Crispy corn cutlets stuffed with paneer and dry fruits, coated with oats for crunchiness is perfect for the occasion.

Ingredients:
Corn kernels .... 2 cups
Boiled and mashed potato... 1 cup
Ginger paste ..... 1 tsp
Garlic paste .... 1 tsp
Green chilli paste .. 1 tsp
Milk ............... 1/2 cup
Salt .............. to taste
Roasted and crushed oats ... 1-2 tbsps
Kasoori methi powder ....  1/2 tsp
Roasted cumin powder .... 1/2 tsp
Oil .... for frying

For the stuffing:
Crumbled paneer .. 1/2 cup
Raisins .......... 1 tbsp (chopped)
Almonds ........ 1 tbsp (chopped)
Pistachios ....... 1 tbsp (chopped)
Cashew nuts ..... 1 tbsp (chopped)
Salt ................ to taste
White pepper ... 1/4 tsp (optional)
(Mix everything together)

For Coating:
Oats ..... 1/2 cup or as needed
Flour ..... 1 tbsp
Corn starch .. 1 tbsp


Method:
1. Grind the corn kernels coarsely adding milk.
2. In a pan heat a tbsp of oil and add the ginger garlic paste.
3. Saute and add the green chilli paste and corn paste. Cook it stirring continuously until it becomes thick. It takes about 5 minutes. Season with salt, roasted cumin powder and crushed kasoori methi.
4. Allow it to cool. Now mix the boiled and mashed potato, roasted and crushed oats for binding. Check the salt.
5. Now take a small portion of this dough and flatten it. Place a little dry fruit and paneer mix and seal it well. Make all the cutlets similarly in an oval or any other shape you like.
6. Mix the flour and corn starch with half cup milk or water to make a thin slurry.
7. Take the oats in a flat plate.
8. Dip the prepared cutlets in the flour slurry and coat them with oats.
9. Heat oil in a pan and fry the cutlets until golden brown.
10. Serve with any sauce of your choice.

PAN SEARED OATMEAL TRIANGLES WITH WARM FRUIT COMPOTE


This is one of the most delicious breakfasts, well worth the effort It can be made ahead and stored in the refrigerator the previous day to save time in the morning. You can add the desired toppings just before you serve. 

Ingredients:
(for oatmeal)
Oats ... 1 cup
Butter .... 4 tbsps
Salt .... 1/8 th  tsp
Cinnamon powder .. 1/4 tsp
Brown sugar ....... 4 tbsps
Water ............ 1 and 1/2 cups
Milk ....... 1/2 cup

(For Fruit Compote)

Water ..... 1 cup
Brown sugar .... 3 tbsps
Cinnamon powder .. 1/4 tsp
Blue berries .... handful
Red currants or cherries ... handful

(For Cider Syrup)
Apple cider ... 1 cup
Brown sugar ... 1 tsp 
Mint leaves ... few 


Method:
1. To prepare syrup, boil the apple cider with sugar and mint leaves until it is reduced to half.
2. To prepare compote, boil the water with brown sugar, cinnamon powder and the mentioned fruits in a saucepan until it thickens.(about 10 - 12 mins.)
3. To prepare oatmeal  combine water, sugar,milk, salt and cinnamon in a pan and bring to a boil. Stir in oats and reduce the heat. Cook for about 15 minutes until it thickens stirring from time to time until it forms into a lump and leaves the sides.
4. Pour the contents in a greased container and allow it to cool. Refrigerate it for at least 1 hour to set.
5. Remove from the tray and cut it into triangles or any desired shape.
6. Melt the butter in a non stick pan / skillet. Cook the oatmeal triangles for 2-3 minutes on each side until light brown.
7. To serve place a triangle in a plate and spoon the fruit compote and cider syrup on it. You may use sweetened cream instead of cider syrup.

OATS AND DRY FRUIT CIGARS / ROLLS


How about trying out these fruit and oats cigars .... aren't they cute ?
You can make them in theme parties.


Ingredients:
For the filling:
Apple sauce or grated apple .. 1/2 cup
Brown sugar .. 1-2  tbsp (as per your liking)
Dates .... 8 
Walnut powder .... 5 tbsps
Almond powder ... 3 tbsps
Ghee ...... 1 tbsp
Cardamom powder .. 1/2 tsp

For the Outer Layer:
Powdered oats ... 3/4 cup
Milk powder ...... 2 tbsp
Cashewnut powder .. 1/2 cup 
Icing sugar ........ 1/2 cup   (or as needed)
Water ............ 1/4 cup
Ghee ... 1 tbsp
Cardamom powder .. 1/4 tsp

For garnishing the cigar tips .... Kesari colour and Cocoa powder.
Poppy seeds .. (2 tbsps) for coating

Method:



1.Make apple sauce by cooking a peeled and sliced apple along with a little sugar and water in a pressure cooker.







2. Take a thick bottomed saucepan and add the ghee.Add the dates and cook them until soft. If they are fresh you don't need to sprinkle any water. Do so if needed.




3. Now add the crushed walnuts, cardamom powder and apple sauce Stir well.






4.You can add a spoonful of roasted oats too.






 5. Cook stirring continuously until a lump is formed.







6. Remove from the heat and allow it to cool.






7. Divide into portions and roll them out like cigars. Refrigerate to make them firm.






8. Now to make the roll dry roast the oats and grind them.







9. Take water in a pan and bring to a boil. Stir in the sugar and cook to one string consistency.





10. Add the ground oats, milk powder and stir continuously. Add the cardamom powder for flavouring.





11. Cook it stirring continuously until it thickens up. Let it cool before assembling the cigars.






12. Now you can add some ghee and knead it to get a smooth texture.






13. Divide it into portions. Using a butter paper roll out each one into a small rectangle.






14. Place the dry fruit cigar as a filling and roll it with the help of butter paper carefully.






15.Coat them with roasted poppy seeds.








16. Garnish one cigar tip with kesari powder to have the effect of burning cigar.Tip the coats of few pieces with cocoa powder for the burnt cigarette butts.

HEALTHY SUGAR FREE OATS AND FRUIT COOKIES


Here is a recipe of healthy sugar free oats and fruit cookies. I have used mashed banana and honey for sweetening them. You can also use apple pulp instead. Cinnamon powder goes well with banana and apple flavour. I just love the aroma while the cookies are being baked.


Ingredients:
Oats .... 1 cup
Whole wheat flour ... 1/2 cup
Eggs ............ 1
Baking soda ... 1/4 tsp
Salt ............... 1/4 spoon
Mashed banana .. 1/2 cup (2 medium size bananas)
Fresh red currants .. 1/4 cup
Raisins .............. handful
Dessicated coconut .. 2 tbsps
Honey ...... 2 tbsps
Butter ...... 3 tbsps (softened)



Method:
1. Beat the butter and honey until blended.
2. Add the egg and beat it until well mixed.
3. Now add the oats, flour, mashed banana, salt, raisins, baking soda. Stir to mix all the ingredients. Finally add red currants and dessicated coconut and stir carefully. The moisture of mashed banana, honey and egg is sufficient to bind the dough.
4. Heat the oven to 180 degrees C (360 degrees F)
5.Take a small portion and flatten it on your palm. Place them baking sheet and flatten the cookies with a fork.
6. Bake them for about 15 - 20  minutes or until light brown.
