KIWI SUMMER COOLER

 

Here is the recipe of a quick kiwi summer cooler with just 5 ingredients.
A perfect mocktail for summer, easy to make and so refreshing.

Ingredients: Kiwis - 3 or as required Salt - 1 or 2 pinches Chat masala - 1/2 tsp (or roasted cumin powder) Yogurt - 1 tbsp Honey - 1 tbsp Chilled water - 2 cups or as needed

Method:
1. Peel the kiwis and cut them into pieces.
2. Transfer all the ingredients into a blender jar.
3. Add water as required and blend them.
4. Strain the juice as kiwi has lot of seeds.
5. Check the taste and if kiwi is too sour add some more honey.
6. Garnish the rim of the serving glass with salt and chilli powder mixed together.
7. Pour the juice and enjoy it chilled.

Yield : 2 small servings or 1 large.

Shhhhh Cooking Secretly is a monthly challenge in a facebook group where we are paired with a different partner every month. Two secret ingredients are  chosen by each partner for the other one and we prepare any dish with those ingredients based on the selected theme of the month which was - Summer Drinks ( No Fizzy Drinks)

NEEMBU GUD KI SHIKANJI / INDIAN SUMMER DRINK


Shikanji is the most popular Indian summer drink. It can be made with sugar or jaggery. This is really a cool and refreshing drink and also good for digestion.

Ingredients: Jaggery ---- 3/4 cup (I used organic jaggery powder) Water ------- 3/4 cup Lemons ----- 3 Ginger ----- 2" piece (grated) Mint leaves ---- handful Roasted cumin powder ---- 1/2 tsp Chaat masala powder ----- 1/2 tsp Crushed black pepper ---- 1/4 tsp Salt --------------------------- as needed.

Method:
1. Boil the jaggery and water for 30 - 40 seconds.
2. Add all the ingredients except lemon juice.
3. Boil them a bit until the flavours are incorporated into the syrup.
4. Add the lemon juice and give one or two boils.
5. Switch off the flame and let it cool.
6. Strain the mixture and fill it in bottle. This concentrate can be stored in the refrigerator for few days.
7. Add 5-6 tbsps of this syrup in a medium size glass. Top it up wiith chilled water or soda.
8. Garnish with mint and lemon wedges and serve.

GOLDEN MILK / TURMERIC MILK / TURMERIC LATTE

 Golden milk is made by combining milk, turmeric and some other beneficial spices. This is is an Indian drink that has been gaining popularity in Western World as Turmeric Latte. As kids we were given this miracle healing drink whenever we were sick, had a soar throat, cold, cough or flue.

Turmeric is said to have amazing healing properties. This is the key ingredient of this recipe. Other spices can be added or skipped as per your liking and preference.

Why we should drink Haldi Doodh ?
There is not one but many reasons why you must have the age-old time-tested haldi doodh every night. From inducing better sleep to boosting immunity and aiding better recovery, a cup of haldi doodh can take you a long way in terms of achieving good health.



Ingredients:
Milk ............ 3 cups (or as needed)
Cardamom powder .......... 1/2 tsp
Turmeric powder ............. 1 tsp
Cinnamon powder .......... 1/4 tsp
Ginger powder ............... 1/4 tsp
Fennel powder .............. 1/4 tsp
Black pepper powder .... 2 pinches
Saffron .......................... 2-3 pinches
Sugar ............................ 5 tsps (you may substitute it with honey as required)

Method:
1. Boil the milk. Add sugar, cardamom powder and saffron while boiling.
2. After simmering for few minutes addthe remaining spice powders.
3. Give it a nice stir. After one or two boils switch off the gas.
4. Cover the pan and set it aside for at least half an hour for the flavours to be infused in the milk.
5. Just before serving warm it up and strain.

PASSION FRUIT LASSI


Make and enjoy this tangy, sweet and flavourful lassi with passion fruit. This fruit is seasonal and you can store the pulp with seeds in the freezer to enjoy the juices and desserts when not in season.
Ingredients:
Passion fruit juice ... as needed
Yogurt ................... 1 cup
Passion fruit .......... 1 (scoop it out)
Honey ................... 1 tbsp or as needed
Water (chilled)................ As required

Method:
1. Extract the juice from 2-3 passion fruits by Squeezing the pulpy portion of the fruits using a strainer.
2. Now in a jar take the juice, honey, yogurt and chilled water.
3. Whisk everything well.
4. Pour it in a glass and garnish with the pulp and seeds from the passion fruit.

MANGO ICED TEA WITH SAFFRON AND CARDAMOM FLAVOURS


Summer is here and so is the mango season. Let us enjoy refreshing drinks made with the king of fruits. This is a very flavourful iced tea made with mango puree and flavoured with saffron and cardamoms. You are surely going to love it.

This recipe is part of the A-Z Recipe Challenge in a facebook group wherein we bloggers come together and choose  key ingredients alphabetically to make and post a dish every month. The alphabet of the month is M and I am presenting this flavourful mango iced tea 

Ingredients:
Mango puree ... 1 cup
Water ............... 6 cups
Green cardamoms .. 5-6 (crushed)
Saffron ................... 2-3 pinches
Tea ....................... 1 tbsp
Stevia ..... ............ 2 packets or 2 tbsps of sugar



Method:
1. Boil water in a pan.
2. Add the crushed cardamoms and saffron.
3. After the colour changes and you get a nice aroma add the tea leaves.
4. Bring to a boil. Switch off the gas and let it cool.
5. Meanwhile place a saucepan on gas and add the mango puree.
6. Stir it for a minute or two and switch off the gas. Add the stevia and mix well. If you are using sugar add it while making the mango compote.
7.Remove the compote in a bowl and let it cool.
8. Strain the cooled tea into a jar.
9. To make the iced tea add about 2 tbsps of mango compote in a serving glass.
10. Pour the tea into it and stir it. Add some ice cubes. If you like your tea very sweet then add a little honey or more sugar in the compote.
11. Decorate the glass with a fancy umbrella and insert a straw.
12. Serve it chilled.
This quantity makes 3 servings.

Note: You can even directly add the mango pulp in the tea but if you make mango compote you can store it and use as a dessert topping as well and to make some juices.
For variation you can also flavour the tea with lemon and mint instead of saffron and cardamoms.

KAIRI KA PANNA / AAM KA PANNA / RAW MANGO SUMMER COOLER


kairi ka Panna or aam ka Panna is the most popular and preferred drink in summer. It is made from raw mangoes and tastes really very delicious, a combination of sweet and tangy flavours.

Ingredients:
Raw mangoes .... 3 small
Mint leaves ...... few
Ginger ............. 1/2 inch piece
Rack salt or black salt .. as needed
Organic jaggery powder ... 6-7 tsps. (or use 5 tsps sugar)
Roasted cumin powder ... 1 tsp
Black pepper powder ..... 1/2 tsp
Water ............. as needed
(You can also use chat masala instead of cumin powder and black pepper powder or jal jeera powder )

Method:

Wash and wipe the mangoes.Peel them. You can even cook them with the peels but peeling method is easier.




In a pressure cooker add 1 cup of water and the peeled mangoes.






 Cook for 5 whistles. If the mangoes are larger cook for 7 whistles.







Allow the cooker to cool for some time before you open it. Don't throw the water.







Now take out the cooked mangoes in a dish and mash with hand to extract the pulp.






Transfer the pulp into a blender along with the water from the pressure cooker.





Add the mint leaves, ginger, salt and organic jaggery or sugar and blend it.





Strain the liquid the discard the pieces of ginger and mint leaves.





Stir in the roasted cumin powder and black pepper or chaat masala powder  or jal jeera powder.









Check for the taste and add more jaggery or sugar if needed.









This concentrate can be bottled and stored in the fridge for few days.





For making the drink pour about 2 tbsps of this prepared concentrate in a glass and add chilled water and ice cubes. Mix well, garnish with mint leaves and serve.

AMLA GINGER LEMON AND HONEY DETOX / AMLA LEMON GINGER AND HONEY JUICE


Amla or Indian gooseberry is an excellent source of Vitamin C, high in fiber, low in calories. It helps in intestinal and liver disorders.
Ginger is an ingredient that has been used in traditional medicines since ages and is extensively used in Indian cooking everyday.
Lemon is another good source of Vitamin C and relieves oral dehydration. It is the most widely used citrus fruit all over the world.
Honey also has antiseptic and antibacterial properties and it is a healthy natural sweetener.

All these ingredients are mostly used and always available in our kitchens. A detox drink made with them is good for general health and cleansing the system specially when taken on empty stomach in the morning.

Ingredients:
Amlas / gooseberries .... 2 big or 3 small
Ginger (chopped)........... 1 tbsp
Lemon juice .................. 1 tbsp
Honey .......................... 2 or 3 tbsps
Salt ...........................  1/8 tsp
Roasted and ground cumin seeds .. 1/4 tsp
Water .............................. 2 cups

Method:
1. Wash the amlas well and cut into pieces.
2. Peel the ginger and cut into pieces.
3. Grind them in a mixer adding the water.
4. Strain the juice and mix honey, salt and roasted cumin powder.

Yield : 1 serving
Note: Serve immediately for best results as the Vitamin C is destroyed very fast on exposure to air and water.
