CHIA SEED PUDDING / NO COOK PUDDING / 3 - INGREDIENT PUDDING


There are times we crave for a dessert and here is one such recipe that can serve as a healthy guilt-free dessert made with just 3 ingredients - Chia seeds, coconut milk and honey. However it can also be had as a breakfast with a variety of add-ons like fresh fruits, crushed dry fruits, cereals, etc etc Sky is the limit. You can also flavour it with cardamom powder, rose syrup, chocolate syrup, or add fruit compote .You can also use yogurt, almond milk, soya milk or even the normal milk also.
Chia seeds have many health benefits and very few calories. These are easily available everywhere.


Ingredients:
Coconut milk ........ 1 tetra pack  (200 ml )
Chia seeds ........... about 1 and 1/2 tbsp
Honey .................. 1 tbsp or more (as you like)

Method:
1. In a bowl mix all the ingredients and set it aside in the refrigerator for minimum 6 to 7 hours or over night. 
2. Check it out before serving and adjust the consistency and flavours as per your liking. 
3. Transfer it into a serving bowl. Garnish with a sprig of mint leaves or anything available at home.

PASSION FRUIT PANNA COTTA


Panna Cotta is traditionally an Italian dessert usually made with vanilla flavour. For variation you can add different fruit pulps to make it exotic for your parties. It is very easy to make and hardly takes much time.

Ingredients :
Passion fruits ... 5 - 6 (about 1/2 cup extracted juice from them)
Cream .............. about 1/2 cup
Milk ................... about 1/2 cup
Gelatine .......... 1 tbsp
Greek yogurt ... 1 small cup - 90 gms (passion fruit or mango flavour)
Sugar ............. little less than 1/2 cup



Method:
1. Cut the passion fruits. Remove the pulp in a strainer. Using a spoon extract the juice into a bowl and discard the seeds. Save some pulp with seeds for garnishing.
2. In a pan warm 1/4 cup of water (luke warm) Switch off the gas and add the gelatine.
3. Whisk it well until it melts and all the lumps are dissolved.
4. Stir in the passion fruit juice and mix until well blended.
5. Now add the cream and stir.
6. Add the full cream milk and mix well.
7. Next goes in the sugar.
8. Now bring the pan back on the gas and stir everything on low flame until everything is blended together.
9. Now remove from the gas and allow it to cook.
10. Now whisk in the yogurt.
11. Pour into the serving bowls, glasses or passion fruit shells and refrigerate until set.
12. Garnish with some passion fruit pulp with the seeds as they are edible.
13. Serve chilled.

Note: I have taken the juice, milk, cream and sugar in equal proportion. Little less than 1/2 cup.

PAPAYA HALWA / PAPITE KA HALWA


If you have a papaya that is not sweet and tasteless do not throw it...,,try out this delicious halwa. I couldn't believe it would come out so tasty. Everyone enjoyed it.


Ingredients:
Papaya ............. 1 large (ripe)
Sugar .............. 3/4 cup (adjust according to the sweetness of papaya)
Green cardamoms ... 4-5
Cashew nuts ............ handful
Desi ghee or oil ...... 4-5 tbsps
Milk powder ......... 2 tbsps (you can also use mawa / khoya instead)

Method:

Peel the papaya and cut into pieces.







Grind in coarsely in a chopper.









Heat ghee or oil in a pan. Add the crushed cardamoms









Tip in the papaya puree and saute on medium flame. Continue to stir it until it is cooked and the oil starts separating. It takes about 20 minutes.





Stir in the sugar and continue to stir.









cook until the water from the sugar is completely dry stirring in between.








Now add the milk powder.










Stir immediately to avoid lumps.










Fry the cashew nuts in a spoonful of ghee.









Add few to the halwa and save some for garnishing.











Garnish and serve hot or cold.

RABRI & KULFI MADE FROM LEFT OVER KAJU PISTA KATLI


During festive season we have lot of left-over sweets. We can use them to make rabri or kulfi. I tried out for the first time and the result was amazing. The rabri and kulfi both were absolutely divine. It hardly took 10 - 12 minutes.

Ingredients:
Kaju pista katli .... 6-7 pieces
Milk .................. 1/2 litre
Malai ................. 3 tbsps
Sugar .................2 tbsps
Pistachios .......... few
Saffron ............. 1 pinch
Cardamoms  .. 2-3


Method:

Break the katli into small pieces.









 Add the crushed cardamoms and saffron to the milk and boil until it reduces to half.







Now add the sugar.









Stir until it melts.









Tip in the katli pieces and stir with a spoon mashing them until well blended.










When the consistency is thick enough transfer the rabri into serving bowls.








Garnish with pistachios. Serve warm or chilled.







The same rabri can be set in kulfi moulds to make nice and creamy kufis.

KARELE KA HALWA


Karela has various therapeutic properties and it is one of the healthiest vegetables. My mom-in-law used to make a variety of dishes with bitter gourd during my pregnancy and post delivery. This halwa is one of them. She added extra ghee and dry fruits but here I have reduced the quantity.



Ingredients:
Karelas / bitter gourds .... 3
Desi ghee / clarified butter .. 3 tbsps
Sugar ........................ 6 tbsps
Cardamom powder ..... 1/2 tsp
Poppy seeds .............. 2 tbsps (dry roasted)
Khoya ........................ 3 tbsps
Milk ......................... 1/4 cup
Almonds .................. 1 tbsp (sliced)
Pistachios ................ 1 tbsp (sliced)

Method:

1. Wash the karelas, peel them and discard the seeds.









2. Cut them into small pieces.









3. Grind them in a mixie without adding any water.









4. In a pan heat the ghee and add the ground karela paste.









5. Stir fry for about 5 minutes until the water is evaporated.







6. Now add the milk and allow it to simmer for few minutes until the karela mixture gets cooked.






7. Tip in the khoya and mix well.








8. Add the sugar and stir it until it melts.







9. Now add the poppy seeds.







10. Keep stirring until the mixture leaves the sides.







 11. Add a portion of dry fruits to the halwa and save some for garnishing.
