MY GUEST POST FOR MAHAS LOVELYHOME (SPINACH AND GREEN PEA SOUP)


 I was invited by Usha Rani to do a guest post in her blog-  Maha's Lovelyhome

NUTTY QUINOA CORN FRITTERS (MY GUEST POST 4 - Random Ramblings )


These days quinoa is being used a lot by everyone. However if you don't find it you may use rice flour or corn flour ( makki ka ata , not corn starch) in this recipe.

Ingredients:
Peanuts .....   1/4 cup ( roasted and crushed)
Quinoa flour .. 1 cup
Corn ............. 1/2 cup (boiled and crushed)
Spring onion .. handful (chopped finely)
Coriander leaves .. handful (chopped finely)
Cheese .......... 1 tbsp (grated)
Red chillies ....  1 tsp (crushed)
Salt ............. to taste
Oil ............ to fry



Method:
1. Mix all the ingredients except oil to make a thick dough. Add salt carefully as the cheese, peanuts and corn are already salted. The consistency should be like how you make for aloo tikkis. (you may need to add a little more flour, check it out)
2. Heat oil in a pan. Take a lemon sized lump and flatten it on the palm of your hand. Deep fry until golden brown.
Serve immediately with sauce of your choice.
The fritters have a very nice taste of crunchy peanuts. My friends really loved them when I served these..It is a simple recipe and can be made in a jiffy for your guests.
As mentioned above, you may replace the Quinoa flour with Makki ka ata or Rice flour.(or mix both)

BREAD & QUINAO VADAS - MY GUEST POST 3 ( Jagruti's Cooking Odyssey)




Quinoa is one of the super foods that is gaining popularity these days. I have been trying out a variety of recipes with it. When jagruti invited me to do a guest post for her I thought of creating a new dish with this super grain. I came out with the idea of making vadas and the recipe is very simple.

You will need:-
Soft bread crumbs... 3 slices ( about 1&1/2  to 2 cups)

(made from fresh whole wheat bread - you may use white bread)
Quinoa flour ........... 2 cups
Asafoetida .......... a pinch  (optional)
Onions .................. 1 cup (finely chopped)
Green chillies ....... 3-4 (finely chopped) 
Coriander leaves .. 1/2 cup (finely chopped)
Baking powder ..... 1/4 tsp
Salt ................ to taste
Oil .............. to fry


Method:
1. Mix all the ingredients together except oil.

2. Make a thick dough adding enough water. (consistency like the normal vada dough)
3. Heat oil in a pan and take a little portion of the vada dough on your wet palm, make a small hole in the middle and drop it into the oil.
4. Fry them to a golden brown colour.
Serve with chutney of your choice and sambar.



Tip: If you are not ready to fry the vadas immediately, do not add salt until then because it leaves water.

 For variation we can add grated carrot or cabbage, or finely chopped greens as well.

PISTA BADAM MUKHWAS (MY GUEST POST - 2 IN Lavanya's blog )



This is called phakki in Sindhi.. We make this during the wedding ceremonies. It is distributed to all the relatives too. 

Ingredients:
Pistachios - Half cup(Sliced)
Almonds - Half cup(Sliced)
Strong pepper mints - One-fourth cup (Broken onto small pieces)
Lump sugar/ misri - One-fourth cup (Broken into small pieces)
Colourful toffees - 1 cup of various colours and flavours like fruity, orange, pineapple, kala khatta etc.(Broken into pieces)
Cardamoms - 3-4 tablespoons(Crush lightly and remove the seeds. Only seeds are to be used)
Shah jeera or Saunf - 3-4 tablespoons(Dry roast it lightly and let it cool before mixing. This ingredient is optional)

Preparation:

Mix all the ingredients together and store in an air tight container. 
You can also pack it in zip lock bags and  put in a decorative pouch to distribute to your friends.
