This is a very popular street food of Maharashtra. Aloo vada / bonda is sandwiched between pav bread along with mint chutney and spicy garlic chutney.This brings back memories of friends in Mumbai, how we relished these during our outings.
Ingredients:
Potatoes ... 500 gms
Besan .... 2 cups
Onion .... 1 (chopped finely)
Green chillies .. 3-4
Coriander leaves .. handful
Jeera Powder .... 1 tsp
Turmeric powder .. 1/2 tsp
Mustard seeds ... 1 tbsp
Cumin seeds ....... 1 tbsp
Asafoetida .......... 1 pinch
Baking soda ........ 1 pinch
Salt ................... to taste
Oil .................... as needed
Method:
1. Boil and peel the potatoes.
2.In a pan pour 2 tbsps of oil. Add the mustard seeds and asafoetida.
3. Now tip in the onions and saute for 2-3 minutes. Add potatoes, salt, coriander powder, cumin powder, turmeric powder, green chillies and coriander leaves.
4. Make round balls with this mixture and set aside.
5. Make a thick batter with besan adding baking soda, salt, cumin seeds and water as needed.
6. Dip the potato balls in this batter and deep fry them.

To Assemble Vada Pav:
Slit open the pav bread. Spread the mint chutney. Flatten a vada and sandwich it in the pav bread with dry red chutney powder sprinkled on the vada.
