Habanero peppers are among the hottest chili peppers in the world. They are named after the Cuban city of La Habana .There are a number of varieties of habanero peppers, ranging in ripe colors from orange, red, yellow, chocolate brown, and even white, though some growers argue that anything but the "Orange Habanero" is not a true habanero.
There are various recipes of making this sauce with change in the ingredients.. I found this one to my liking. It is a milder version. You may adjust the spice level according to your preference and add the chillies accordingly. This sauce can be added to many dishes to give the spicy flavour to them.

Ingredients:
Habanero chillies .... 5-6
Garlic cloves .......... 5
Onion .................... 1 small
Carrot .................... 1 cup
Water ................... 1/4 cup
Lime juice ........... 1/4 cup
White vinegar ...... 1/4 cup
Tomato puree ...... 1/4 cup
All spice ............ 1/2 tsp
Salt ................... to taste
Sugar ................ 1 tbsp
Olive oil ........... 2- 2 tbsps
Method:
1. Heat 2 tbsps olive oil and saute the carrots, onion and garlic.
2. Add salt and 1/4 cup water. Simmer until done. Let it cool.
3. Transfer into a mixie and add the rest of the ingredients except oil.
4. Grind to a smooth paste.
5. Heat the remaining oil in a pan and cook the sauce for 3-5 minutes on low flame.Cover ot with a lid to avoid splashing.

Have not heard it..seems too hot..I love hot flavour..can I use normal dry chilli instead of habanero chilli

ReplyDeleteIn our case it is quite opposite.. I love spicy food but hubby can never stand chillies.. I make blad food at home and these kind of sauces are my saviours
