On days when you run out of veggies at home make these papad stuffed parathas .. Crush the roasted papads, add finely chopped onions, green chillies, coriander leaves, salt and spices. It really makes a tasty filling. Enjoy them with curd and pickle
Wheat flour ....... 2-3 cups
Papads .............. 3-4 toasted or fried (crushed)
Onions ............. 1 (finely chopped)
Green chillies .... 2 (finely chopped)
Coriander leaves ... handful (finely chopped)
Amchoor ............. 1/2 tsp.
Red chilli powder .. 1/4 tsp.
Cumin powder ...... 1/2 tsp.
Salt ...................... to taste
Ghee / oil
Method:
1. Knead a soft dough adding a little salt and 1 tbsp. ghee or oil. Set aside for 30-40 minutes.
2.Crush the papads and add onion, coriander leaves, green chillies and the dry masalas and just a pinch of salt as the papads are already salty.(this has to be mixed just when you are ready to roll the parathas.)
3. Roll out a little dough, apply a tsp. of oil and stuff it with the mix. Seal it like a pouch and roll again carefully. Roast the parathas on a griddle adding a little ghee while roasting.
4. Serve hot with dahi or pickle.
