RATALYACHA KEES / GRATED SWEET POTATO STIR-FRY / NAVRATRI RECIPES / UPVAAS RECIPES


This is one of the simplest recipe from Maharashtra Cuisine made specially on the fasting days. Grated sweet potato is stir-fried with lot of green chillies, roasted peanut powder, grated coconut and coriander leaves  with a simple tempering of cumin seeds. For seasoning we just use salt and little sugar is optional. I did not add it as the sweet potato has natural sugars.
This recipe is for Shhhh Cooking Secretly group event in which we are paired with someone different each month who selects 2 secret ingredients for us. Ingredients:
Grated sweet potato ... 2 cups
Roasted and powdered peanuts ... 1/4 cup
Fresh grated coconut ................  4 tbsps
Coriander leaves ..................... 3 tbsps
Green chillies ....................... 3-4 (add as per your liking)
Salt ............................. to taste
Lemon juice ............. 1 tbsp
Ghee / clarified butter .. 1 tbsp

For tempering:
Cumin seeds .... 1 tsp
Peanuts .......... 1 tbsp

Method:

Peel the sweet potato and grate it using the thick side of the grater. Put them in ice cold water so that they remain crunchy.








Dry roast the peanuts.








Grind them coarsely.










In a pan melt the ghee.










Add the cumin seeds and a tbsp of whole peanuts.










Next add the finely chopped green chillies.









Drain the water from the sweet potato.









Add it to the pan and saute a bit. Stir in the peanut powder and salt.
Stir to mix and cover it for half a minute on low flame.







Finally add the lemon juice, grated coconut and coriander leaves.








Stir to mix everything together.

  5. When I first this recipe on Poonam's blog, I was intrigued. Now that you've made, its tempting me to make it as soon as I can buy sweet potato. Looks so healthy and delicious too.

  12. Love this fasting food recipe. Grating the sweet potatoes must make them taste like crisps. I like sweet potatoes as they cook so fast. I am certainly going to try this next time I am fasting.

  14. This is one of my favourite fasting foods ever! Especially during winters or post Navratri, we get good sweet potatoes in market and this is something I always cook at home.

  15. I haven't tried grated sweet potato stir-fry yet! It looks very interesting and I am definitely going to try it soon. We get orange coloured sweet potatoes here, but they do taste similar to shakarkand. I can only imagine right now the delicious sweet and spicy taste of dish. Will definitely let you know when I try!

  16. Maharashtrians can make kees from so many veggies but Ratalycha Kees remains my personal favourite because of its flavour profile. :) I am so glad to see this recipe as a part of the Maharashtrian challenge.
