TANGIER CHICKEN BITES

A delicious chicken chukka with "Tangier Spice Mix" served with khari biscuits (puff pastry flaky biscuits). I had tasted a chicken snack presented in this way at a restaurant recently. Isn't it a novel idea ? The tangier spiced chicken tasted even better than the restaurant one with the combination of varied flavours. You don't even need any chutney or sauce with this yummy snack.

Ingredients:
Boneless chicken .... 200 gms
Onion ..................... 1/2 cup (sliced)
Tomato ................. 1
Green chillies ...... 1
Ginger .................. 1 + 1 tsp
Garlic .................... 1 + 1 tsp
Tangier spice mix ... 1 tsp
Turmeric powder ... 1/4 tsp
Salt .................... to taste
Olive oil or vegetable oil ... 2 + 2  tbsps
Lemon juice ................. 1 tbsp
Khari biscuits .............. Store bought ones. (you can make them at home with puff pastry dough)
Coriander leaves ..... few for garnishing
Onion rings ............. few for garnishing

Method:

Cut the chicken into cubes and marinate with ginger garlic paste 1 tsp of each, salt and lemon juice.

In a pan heat 2 tbsps of oil and fry the onions until golden brown.
Add tomato, green chilli and the remaining ginger garlic paste. Add half cup water and simmer to cook.Blend it using hand blender.

Now in a pan heat the remaining 2 tbsps oil and fry the marinated chicken.

When it is 3/4 th done add the Tangier spice mix and 4 tbsps of the fried onion paste.

Keep stirring until the oil starts to separate and the chicken is done.
When you are ready to serve place the khari biscuits in a serving platter.

Place a chicken piece on them and garnish with onion rings and coriander leaves.

Note: The Tangier Spice Mix can be bought from the online store - " Sprig "
