AMRITSARI PEDEWALI LASSI / PUNJABI LASSI / SWEET LASSI


This is a rich and refreshing sweet yogurt drink, a speciality of Punjabi Cuisine. Amritsar is very famous for this. Thick yogurt is churned with sugar, crushed malai pedas, ice cubes and is flavoured with cardamom powder and saffron strands soaked in milk. Some like to add milk or malai to it. Punjabis love to take large glassfuls of this rich and creamy drink. It is quite filling with the addition of crushed pedas and I bet a glassful of this and you would want to skip your lunch.


Ingredients:
Thick yogurt .... 1 and 1/2 cups
Sugar ..............  2  tbsps (or as per your taste)
Milk Pedas ..... 2
Cardamom powder .. 2 pinches
Saffron ................ few strands soaked in warm milk.
Pistachios .......... few (sliced very finely)
Ice cubes .... as needed.

Method:
1. In a mixer add yogurt, sugar, crushed pedas, cardamom powder, saffron and blend it until the pedas are well blended.
2. Just before serving add the crushed ice and blend it again.
Garnish with crushed pedas, sliced pistachios, a pinch of cardamom powder and few strands of saffron.

    1. They have this type of lassi in the interiors of Punjab..My hubby used to go with his friends and I heard from him that it is so heavy. You will just go to sleep after drinking a large glass like Punjabis do.
