PASTA WITH INDIAN FLAVOURS


I really love making these fusion dishes. Pasta is such a versatile dish which can be made with so many variations. Today I have made it the Indian way with tadka and spices.

Ingredients:
Pasta ... 1 cup (use any kind)
Onion .. 1 (chopped finely)
Tomato .. 1 (sliced)
Tomato puree ... 1 tbsp
Tomato ketchup ..1 tsp
Chilli sauce ....... 1 tsp
Green chillies .. 1-2 (skip if you are making for kids)
Coriander leaves ... handful
Ginger ... 1 tsp (grated)
Garlic .... 1 tsp (crushed)
Mustard seeds .. 1 tsp
Cumin seeds ...... 1 tsp
Asafoetida ...... a pinch
Turmeric powder .. 1/4 tsp
Coriander powder .. 1/2 tsp
Salt ..... to taste
Oil ... 3-4 tbsps


Method:
1. Boil water in a pot and add salt and a tbsp of oil. Tip in the pasta. After 2-3 boils switch off the gas and cover it with a lid for 4-5 minutes. You will find the pasta ready. Drain it and set aside.
2. Heat oil in a saucepan and add the asafoetida, cumin and mustard seeds. When they crackle add the ginger, garlic, green chillies and onion. Saute until translucent.
3. Now add the tomatoes and stir fry until they are cooked.
4. Add the salt, sauces, puree and the spice powders mentioned in the list.
5. Stir in the drained pasta and coriander leaves.Mix carefully.
Serve hot.

    i make it without tadka though do use onion capsicum in it at times
    and at times with white sauce hehe
