MIXED VEGETABLES IN TOMATO GRAVY



This is a simple mixed vegetable curry in tomato gravy. You can choose vegetables of your choice, I have made with carrots, potatoes, beans and green peas.

Ingredients:
Mixed vegetables ... 2 cups
Tomatoes ............ 2-3   or ( tomato puree 1/2 cup )
Green chillies .... 1-2
Ginger ........... 1 tsp
Garlic ............. 1 tsp
Asafoetida ..... a pinch
Cumin seeds .... 1 tbsp
Turmeric powder .. 1/4 tsp
Coriander powder ... 1/2 tsp
Cumin powder ...... 1/2 tsp
Red chilli powder .... 1/4 tsp (add more if you like)
Salt ...   to taste
Oil ....... 2-3 tbsps
Coriander leaves ... to garnish


Method:
1. Peel and cut all the vegetables into cubes.
2. Heat oil in a pan and add the asafoetida and cumin seeds. When they crackle, add the ginger, garlic and green chillies.
3. If you are using fresh tomatoes add at this stage. But if you are adding puree then you first add the mixed vegetables.
4. Saute them and add the spice powders and salt. Add the tomato puree also.
5. Stir it and add sufficient water to cook depending on the consistency of the gravy you want.
6. Add chopped coriander leaves and save some for garnishing.
6. Simmer until the vegetables are cooked.
This goes well with rotis and puris.
