You can add any vegetables of your choice. I have used carrots, green beans, red and green capsicums, potato and brinjal.
Spinach ... 2 bunches
Mixed vegetables... 1 cup
Onion ..... 1 (chopped finely)
Ginger ..... 1 tsp .. (grated)
Garlic ...... 1 tsp (crushed)
Green chillies .. 2-3
Tomatoes ....... 1
Garam masala .... 1 tsp
Amchoor/mango powder .. 1/2 tsp
Oil ..... 2-3 tbsps
Salt .... to taste
Cream ... 2-3 tbsps (optional)
1. Blanch the palak and make a puree. (do not throw away the water, use to cook vegetables)
2. In a pan heat oil and add saute the ginger, garlic and onions.
3. Now tip in the vegetables, green chillies and tomato. Add the water strained from the spinach to cook the vegetables. Add salt.
4. When the vegetables are almost done stir in the spinach gravy and give a boil. Add cream and stir.
