SHREDDED CHICKEN WITH CAPSICUMS / BELL PEPPERS


Shredded chicken and bell peppers in chilli black bean sauce served with fried rice ..

Ingredients:
Boneless chicken .... 200 gms ( cut into thin long strips )
Capsicum / bell pepper .... 1 ( cut into thin long strips)
Garlic paste ................   1 & 1/2 tbsp
Soy sauce ................. 1 tbsp
Blackbean sauce ...... 1 tbsp ( you may replace this with dark soy sauce )
Chilli sauce ............. 1 tsp
Tomato ketchup ..... 1 tsp
Ajinomotto ............. a pinch ( optional )
Corn starch ........... 2 tsps
Salt ................ to taste
Oil

Method:
1. Marinate the shredded chicken with 1/2 tsp garlic, soy sauce and a little salt.

2. In a wok, add oil and saute the remaining garlic. Add the chicken and stir-fry.

3. While frying, add the black bean sauce, chilli sauce, tomato ketchup and ajinomotto. Be careful with adding salt as the sauces already contain salt.

4. When it is 3/4 th done, add the bell peppers and simmer to cook. You can use different coloured ones too.When almost done, dilute the corn starch in water and add to the chicken.The consistency of the chicken depends on your liking. So add the water accordingly.
Serve hot with plain or fried rice.
