MALVANI MASALA



Malvani dishes are so spicy and full of flavour. Home made masala powder is always best. Here is the recipe for you.

Ingredients:
Coriander seeds ... 1 tbsp
Spicy dry red chillies .......... 2-3
Kashmiri chillies - 2-3
Fennel seeds / saunf .. 1 tsp
Cloves ............. 6
Cinnamon ......... 1 inch piece
Bay leaf ............. 2
Black cardamom... 1
Green cardamoms .. 4
Nutmeg ........... 1/8 tsp
Poppy seeds ...... 2 tbsps
Black pepper corns ... 1 tbsp
Cumin seeds .......... 1 tbsp
Nag kesar - 1/2 tsp
Dagad Phool - 1 tsp
Mace - 2
Dessicated coconut/khopra.. 2-3 tbsps
Turmeric powder .... 1/2 tsp

Method:
Dry roast and grind all the above ingredients.
This quantity is sufficient for 1 kilogram of chicken/mutton.
Increase or decrease chillies according to your preference.
You can grind a large quantity and refrigerate it in an air tight container.
