COTTAGE CHEESE/PANEER SANDWICH


These cottage cheese sandwiches are so light and perfect to serve for breakfast or brunch. The filling is healthy and you will surely love them.

Ingredients:
(This quantity is for one sandwich)

Bread slices .... 2
Cottage cheese/paneer ... 1 tbsp.
Olives ................... 2 (chopped)
Spring onions ....... 1 tbsp ( chopped finely)
Parsley ................ a sprig (chopped)
Black pepper /white pepper........ a pinch
Salt ...................... optional
Butter

Method:


1. Crumble the paneer and mix all the ingredients together. I have not added salt because the tanginess of the olives balances the taste.

2. Butter the bread slices and spread the mix. Toast it and serve immediately.
This can be eaten cold or toasted.
