MAKHANE KI KHEER ( Vrat ka Khana)


Makhanas are puffed lotus seeds. They are known as fox nuts in English. These can be eaten on fasting days. Here is a simple recipe of kheer with makhanas.


Ingredients:
Makhanas ....  2 cups ( puffed lotus seeds / fox nuts )
Milk ............. 3 cups
Milk powder .. 2 tbsps
Sugar ........... 1/4 . (according to your taste)
Cardamom powder - 1/2 tsp
Saffron ..................... 2 pinches
Ghee....................... 2-3 tbsps
Unsalted pitachios - handful
Unsalted almonds - handful
Raisins - handful
Rose petals - few


Method:
1. Heat the ghee and break the makhanas into it. Saute for a minute on low flame till the colour changes to light pink.
2. Fry the dry fruits in little ghee. Slice them and set aside.
3. Crush the makhanas coarsely in a pestle and mortar.
4. In a pan pour the milk and add the  cardamom powder and saffron. 
5. Let it boil. Add the powdered milk, makhanas. Keep stirring from time to time. At this stage stir in the sugar and mix well. 
6. Add the dry fuits and check the sugar.
7. Garnish with chopped nuts, cardamom powder, saffron strands and dried rose petals.
8. Serve warm or cold.

  6. Oh Shobha! Why didn't you post this before? I had phul makhana from quite long time, I don't even know why I bought it and wasn't sure what I will cook with it. How can I forget Kheer. We guys make kheer from everything.
